Tortellini Salad

I found this recipe about 20 years ago and make it all the time.  My Boys just love it and we hope you do too.  ~Hugs~

My twins made this Tortellini Salad!  <3 p="">

Tortellini Salad

I bag fresh, frozen or dried Tortellini
1 jar Marinated Artichokes, quartered
2-4 oz Stick Pepperoni, cubed
8 oz Cheddar Cheese, small cubes
1 pint Grape or Cherry Tomatoes
1 can pitted small Black Olives
Italian Dressing Mix, prepared according to directions
Parmesan Cheese, freshly grated

Cook tortellini according to directions, being careful not to over cook,  drain.  Put in bowl.
Drain artichokes and quarter if whole. Add to bowl.
Cube cheese and peeled pepperoni.   Add to bowl along with tomatoes, olives.  
Make Italian dressing and add enough to generously coat.  Toss lightly. 
Add parmesan cheese just before serving.
Can be served at room temperature or cold from the refrigerator.

Sounds really yummy! Your little helpers are just adorable. My daughter loves to be in the kitchen with me. Can be trying at times but I hope I am instilling a love of cooking in her. My son showed a little interest when he was younger, now is considering becoming a chef! Im trying to not persuade him too much and let him make that decision on his own, but how great would that be! Great recipe!

Thank You Melissa! I think our children carry with them the times shared and the memories stored, of the great times when they were little. Making the time they cook, as they grow older, a pleasant and loving time as they relive memories of the food they cook.

I know you are so proud of your son! I hope he goes forward with his interest to become a chef. Wouldn't that be the Best if he did?
