Reid's Egg and Chicken Pie

We were out of town all day and came home tired and hungry after being on the road for 5 hours non-stop.  We looked in the refrigerator and Reid pulled out leftover rotisserie chicken, eggs, a zucchini and a red pepper.  There was our supper ready to be make.  Reid did an excellent job of pulling apart the chicken and mixing everything together.  Perfect for Sunday brunch or a fast supper.  Hope y'all enjoy Reid's Egg and Chicken Pie!  <3 and Hugs!

(Chicken, Zucchini and Red Pepper Frittata)

Reid's Egg and Chicken Pie
Named and Made by Reid

6 eggs
1 cup leftover rotisserie chicken
3/4 cup red bell pepper
1/2-3/4 cup cheddar cheese
1 small zucchini or 3/4 cup to 1 cup
1/4 teaspoon fresh ground pepper
1/4 - 1/2 teaspoon kosher salt, depends on how saltly your chicken is

Preheat oven to 350 degrees

Mix all together.  Pour into greased pie pan. Cook until set around 15 minutes.  I was needed in another room and the timer went off a time or two so I cannot say a definite time mine cooked.  :D

Y'all can tell I was tired...I originally posted this recipe and didn't mention the eggs! :D

Enjoy!
