I started cooking diced apple not knowing what I was going to do with them. I finally decided to make a Sour Cream Coffee Cake, Adapted from a delicious recipe given to me by our dear friend Robin, incorporating the cooked apples and walnuts (only I was out of the nuts) . Cooked Apple Coffee Cake
1/2 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 cup sour cream
1 cup chopped walnuts
Dry Ingredients
1 cup whole wheat flour
1 cup all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
Cooked Apples
4 cups diced apples
1 cup brown sugar
2 teaspoons cinnamon
4 tablespoons butter or margarine
How to for Cooked Apples
Cook in heavy pot until apples are tender and liquid has thickened. Add more apple juice, or water, if needed.
Preheat oven to 350 degrees.
Spray Bundt pan well.
Sift dry ingredients together.
Cream softened butter and sugars until light and fluffy.
Add eggs and beat together.
Alternate sifted dry ingredients with sour cream…ending with sour cream.
Fold in nuts and cooked apples.
Pour into a greased bundt pan.
Bake for 20 turn pan around and cook another 15 - 20 minutes
or until done by testing with toothpick.
