A little Spicy. A little Sweet. These are perfect for an appetizer, and after school snack or meal. I love anything to eat that is convenient..especially with my boys.
Black Bean, Corn and Turkey Bites

1 lb ground turkey
1/2 small onion
2 tablespoons cumin
1 tablespoon chili powder
1-2 tablespoon minced garlic, to taste..I used 2
1/2 teaspoon fresh ground pepper
sea salt to taste
1 15 oz can black beans, do not drain
1 10 oz can rotel, mild or hot, your preference
1 cup of sweet corn, frozen or canned
corn tortillas, cut in 2 1/2" to 3" circles

Brown meat, drain if needed.
Add onion, cumin, chili powder and garlic to meat and cook onions until translucent.
Add cans of black beans, with liquid, and rotel.
Add corn and simmer until liquid thickens

Preheat oven to 350 degrees
While simmering cut corn tortillas in 2 1/2” - 3" circles. Squares would also be cute.
Once mixture is cooked, heat the circles, or squares of corn tortillas in the microwave, or skillet, for 8-10 seconds (adjust your time if needed) just to heat and make pliable.
Fit in hole of muffin tin and add mixture.
Cook in a preheated 350 degree oven for 6-10minutes,
until set and starting to brown.

Take out of tin and plate. Garnish with shredded cheeses and lettuce, sour cream, green chilies…whatever you top your taco with.
