Cantaloupe and Bacon

We are loving summer time and all the fruits of its labor.   We especially love cantaloupe, we found it on sale!  Put it in anything and we will eat and drink it! 

Today the boys had fun making their own sandwiches and salads with cantaloupe and bacon.  We had BLT&C(antaloupe) sandwiches and salads. 

The sandwich was made on lightly toasted wheat bread.  With iceberg salad mix, homegrown tomatoes, bacon and thinly sliced cantaloupe seasoned with salt and pepper.  This has a sweet, crunchy, salty yumminess about it.   The Boys had grain, vegetables, meat and fruit all in a sandwich!  Freshly made lemonade and a frozen yogurt stick finished their meal.



The salad was the same...minus the bread.  We somehow forgot to add the shredded cheddar cheese on top.   I hope you will give these a try...I think you will be pleasantly surprised. 



I am going to make a larger salad with layers of fresh spinach leaves, teriyaki grilled chicken breast,  thin slices of yellow and red peppers, homegrown tomatoes and cucumbers and topped with cantaloupe seasoned with salt and pepper.

Oldest Twin Said.....

"You'll never catch me but you will see me!" as they are all chasing each other round and round the house!  Okay, maybe only a Mama to Firecracker would laugh at that.  LOL

What can I say?  We have fun here!  :D

Tropical Pineapple Pops In A Cup

We had fun this morning making Tropical Pineapple Pops In A Cup.  The only thing was the wait! 

Tropical Pineapple Pops In A Cup

1 large can of Crushed Pineapple, drained saving juice
1 box of Island Pineapple Jello
2/3 cup of Sweetened Koolaid Tropical Punch Drink Mix
Enough water to make two cups added to pineapple juice
3 or 5 oz paper cups
craft sticks
foil

Drain pineapple saving juice.  Add enough water to make 2 cups and boil.  Disolve jello with liquid.

Chop 2/3 can of the pineapple in your mini chopper or food processor to make it fine.  (I only had chunks so had to process mine..maybe the crushed will be small enough)  Mix well with koolaid. 

Add jello to koolaid and pineapple.  Mix well.  Ladel into small cups.  Place a small square of foil on top with a small slit in the middle.  Insert craft stick and WAIT!  Kids really loved this and they were fun to make. 

*NOTE*  Very sweet for me but My Boys loved them.  Maybe use an unsweetened jello next time will cut down on the sugar but not enough to make a difference.

Ice Cream Cone In A Bowl.

Your Grandma would like to eat a bowl of vanilla ice cream with corn flakes in it while watching tv.  It was so good...just like eating an Ice Cream Cone In A Bowl.  :)

We use the Ice Cream we just made in bags for this.  Yummy!

The boys had a ball Shake, Shake, Shaking to make their own Ice Cream!   It's so easy and fun!

Strawberry Angel Cake

Here is another easy cake your Precious Grandma would make. It's another refrigerator one. Seems like I have a lot of those lately. :D   Maybe because it was so hot in Georgia and having a slice of the cold cakes out of the refrigerator were best!  I can just see you Grandma...standing by the counter singing hymns while she fixed this cake for us.  Her head tilted to the side while she frosted it making certain it was smooth and even.  Oh, how I dearly miss her......

Strawberry Angel Cake

1 large box of Strawberry Jello
2 cups boiling Water
1 larger container of Frozen Sliced Strawberries, Thawed but not drained
1 large Angel Food Cake
1 medium container of Cool Whip


Tear half the Angel Food Cake into pieces and put in a large bowl. Mix Jello with 2 cups boiling water. 
Add thawed strawberries to the jello. Pour halve of the mixture over the Angel Food Cake. Tear the rest of the cake in pieces and add the remaining jello mixture. Place in the refrigerator overnight. When ready to serve, take out of refrigerator and place in a bowl of hot water for a few seconds to loosen the cake. Put a plate over the top of the bowl and flip. Frost with Cool Whip. You can add some fresh strawberries as a garnish on the plates.

Beautiful Weeds

My love for flowers is unending.  The smell of roses, the quaintness of daisies, the romance of calla lilies.  But, there is nothing more Beautiful that a Bouquet of weeds  handed to me from little hands, by little boys that have a smile so sweet it melts my heart.  

Children see the Beautiful in everything.  What we consider to be weeds in the yard, something we try to get rid of,  have now become the most Beautiful of all Bouquets.  Don't overlook someone/something because of outward apparence.  What shines from it can be priceless.

You're To Young To Understand

My Precious Boys...You are much to young to understand what is now going on in our lives.  In a matter of weeks, we have gone from very little financial worries to, What are we going to do if....?  It is with saddened hearts and heavy spirits that we have to return our mini's; Heaven, Kya, Teddy, Sunny, Hercules and our paso fino, Scooby.  We will always remember the great times shared with each other and I just know they will always remember you three very special boys.

There hasn't been any rain in such a very long time...there is no grass to feed your little friends.  We have been buying hay for them for a year.  Along with feed, the farrier, worming and vaccines..the costs just continue to add up.  If only it would rain.....   But you know what my little darlings?  Without rain there is always plenty of Sunshine.  And, Sunshine brightens our hearts..doesn't it?  Remember when we were watering the garden the other day and we saw a beautiful rainbow from the sprinkling of water?  Whenever we are feeling low we just reach inside and turn on Sprinkles and our Sunshine within to make our own Rainbows.

Now, we know we will be just fine and dandy.  We still have our other animals as a part of our family and our friends that we dearly love.  The most important and the greatest of all, is We Have Each Other.   I Love You So Very Much...My Precious Boys!  <3 <3 <3

Lord, Thank You For All You Have Given Us

We have been worried about a lot lately and recently finances have come into play. We worry about this and that and how it would be if......

This morning we were on our way to sell a toy the boys had outgrown....yes, Craiglist. On the way there we saw a worn out older woman with a wheel chair coming out of the woods with a man barely moving along using two canes. My heart broke into. I immediately told my husband we needed to turn around...I needed to see these people and give them what money I had. We turned around and they were by the road when we came to them. They seemed a little frightened by a truck pulling up close. I jumped out and went to them. The lady actually wasn't that old but time and being homeless had taken a huge toll on her, both of them. I held the money out to her and told them go get breakfast. They immediately began to cry and saying "God Bless You". Tears poured from my eyes as I told them the same and to take care of themselves. As we left they were saying "Praise God" with arms held up toward heaven above.


My Boy's couldn't stop talking about turning around to help this couple coming out of the woods.  My oldest told me..."Mama,  God wants you to give them money.  He really does want you to"  :wub:

I told Ted I had to give them the money I was going to get from the toy. Sadly, they were nowhere to be found when we returned to the last place we saw them. I was hurt that I couldn't give the money to them as I felt this is what I was supposed to do.

We are So Very Blessed, So Very Blessed.......

Making Rainbows

The smoke is terrible outside from the wildfires nearby.  You walk outside and see only smoke..dense, smoke.  Eyes watering and nose burning…Time for us to stay inside.
We are going to make our own Rainbows….Jigglers that is.   Crystal clear slices of rainbows held in little hands.  ~smiles~

So this is what we need for our….

Rainbow Jigglers

Some colors have choices…some don’t.  Go ahead and pick your own flavors and have different combinations.  These are what we are going to use today.

1 pk of red gelatin..strawberry
1 pk of orange gelatin…well orange
1 pk of yellow gelatin….lemon
1 pk of green gelatin…lime
1 pk of blue gelatin… blueberry
1 pk of purple gelatin…grape
6 pk of unflavored gelatin
6 cups boiling water…plus a little more as some my evaporate (I use bottled to make it clearer)
6 cups of cold water (still using bottled water)

This is a lot of work but worth the smiles and giggles received from My Boys.  ~smiles…yet again~
You need a container that is deep enough to hold over 12 cups of liquid.  I was getting ready and couldn’t find the container I usually use…urgh.  I finally decided on a Rubbemaid 40 cup container that is to tall but I think it will work…. Line with a couple of pieces of plastic wrap, length and width, with edges overhanging.  Give a light spray of oil.   You will need this to lift the giant rainbow of gelatin out of the pan.  :D  You may also make in clear cups..pour the layers in and placing on a cookie sheet to set. 

Boil water, keep hot.  To make each layer....

Mix unflavored gelatin with 1 cup of cold water.  Set aside while water is boiling…a couple of minutes.  Mix flavored gelatin with 1 cup of boiling water.  Mix the two together and pour into container.  Place in refrigerator or freezer until set.  When it set…mix the orange gelatin the same as above.  Repeat in order as listed. *note*  I am missing the indigo layer, I didn’t find a gelatin to match. 

When you are finished with the last layer…gently lift from pan using overhang of plastic wrap.  Slice or use a rainbow shaped cookie cutter.  Hand to your little ones and see their faces sparkle like a rainbow after the rain.

It's National Fudge Day!


Here is a quick and easy fudge recipe in honor of National Fudge Day! Yep...smack dab in the middle of June! :D

Quick and Easy Marshmallow Fudge

Ingredients
1 teaspoon butter 
1 can (16 ounces) chocolate frosting 
2 cups (12 ounces) semisweet chocolate chips 
1/2 cup chopped walnuts 
1/2 cup miniature marshmallows 


Directions
Line a 9-in. square pan with foil and grease the foil with butter; set aside. In a microwave, melt frosting and chocolate chips; stir until smooth. Stir in walnuts; cool for 10 minutes. Stir in marshmallows. Transfer to prepared pan. Cover and refrigerate until firm. 
Using foil, lift fudge out of pan. Discard foil; cut into 1-in. squares. Store in an airtight container in the refrigerator. Yield: about 2 pounds.

Grandma's Blueberry Cake

This cake has been around for a long time. My Precious Mama,  :wub: would be asked to make it at every get together.   <3

Mama's Blueberry Cake

1 cake mix, yellow
1 large tub of Cool Whip
8 oz of cream cheese, softened
1 cup confectioners sugar, more if needed
1 large can of Blueberry pie filling, make your own

Bake cake according to directions using 2 or 3 pans*. Cool. 

Mix softened cream cheese and confectioners sugar until fluffy. Fold in Cool Whip. Put one half, or third, frosting on a layer and top with one half, or third pie filling. Repeat with other one or two layers and finish sides of cake with remaining frosting. Keep refrigerated. 

*I used two pans.  Yum!

Here We Go

I am looking forward to sharing everyday life along with Recipes For My Boys.  Some are old, some were given to me for my Boys.  Some were found here and there and some were just tossed together and worked for us. 

My parents and grandparents have all passed away.  My hopes are to create new memories with my Boys, by sharing the old memories and cooking from their recipes or those that are very similar to them.

Join us as we make new memories and preserve the old.

We are never far from Happiness..It is always inside just waiting to shine like the eyes of a child.
