Baked Sandwiches

We love making these and they are perfect to slice and send to school for lunches.




Baked Sandwiches

2 cups King Arthur Unbleached All Purpose Flour
2 cups King Arthur Premium Whole Wheat Flour
2 Tablespoons Fleischmann's Rapid Rise or Bread Machine Yeast
1 teaspoon sea salt
4 Tablespoons honey, optional
1 1/2 cups hot water, 120 to 130 degrees F
1 egg white
1 Tablespoon water
your favorite sandwich fillings

Whisk 1 1/2 cups each, wheat and all purpose flour, yeast and salt together to mix.  Heat honey in water and add to dry ingredients.  Stir with a spoon until the dough comes together, adding as much flour as needed to form a soft dough.  Turn out on a floured surface and knead 3 to 5 minutes until smooth and elastic.  Divide dough in half and roll into rectangles.  Spread condiments on dough to within 1" all around.  Top with meat, cheese and/or veggies.  Starting lengthwise, roll up tight.  Seal edges and fold under ends.  Place on baking sheets.  Cut diagonal slits in top.  Cover with plastic wrap that has been sprayed with non-stick spray.  Let sit 20 minutes or until double in size.  Remove plastic wrap.  Whisk egg white and water.  Brush on sandwiches.  Cook in preheated 425 degree F oven for 10 to 12 minutes until golden brown and done.  Enjoy!
