Pie Filling From Canned Fruit
29 oz. can fruit in juice, sliced or diced
1/4 to 1/2 sugar cup, more or less...to taste
3 Tablespoons corn starch, more if needed
3 Tablespoons juice from can
Remove 3 Tablespoons juice from can and add in a small bowl with corn starch, mix until dissolved and put aside. Add fruit and remaining juice to a heavy saucepan. Add sugar to taste. Heat to a boil, stirring until sugar is dissolved. Slowly add slurry of corn starch and water to fruit, stirring. Reduce heat and simmer to your desired thickness, stirring so it doesn't stick. Let cool and use as needed in your favorite recipes. Enjoy!
