Broccoli Tater Tot Casserole

Tater tot casserole has been around for a long time, hasn't it?   It is in old cookbooks, magazines revamp it once in awhile and I even remember seeing it on the show with all the children that start with a J.  I have to say, I admire Michelle.  There is absolutely no way I could have 19 children and keep my wits about me.  Cooking,, cleaning, homeschooling, church and who know what else she does. Nope. There is No. Way.   Any who, back to the tater tot casserole.  


I've thought about making tater tot casserole many times but have never done so.  I have even bought the tater tots to buy and still didn't make it.  Well, the time wasn't my fault, hubby cooked supper for the boys....fish sticks or chicken nuggets, something out of a bag and tater tots.  I couldn't complain...too much.  ;)

Today, I had a brilliant idea to make the casserole with broccoli and ham.  MMM....  Somehow, I managed to leave the ham out but I know it would have been great.  It tasted grate eaten together.  Oh, did I tell you, this is made using frozen broccoli and tater tots?  Well, that should have been one of the first things I wrote! Note to self...put in first paragraph.  I also used canned condensed soup.  I usually make my own, but I wasn't feeling it tonight and had hubby pick some up at Walmart.  Here ya go.  My version of tater tot casserole!



Broccoli Tater Tot Casserole
Ingredients

24 oz. frozen broccoli cuts
1 cup leftover ham, chicken, pork or beef, optional
1 cup cheddar french fried onions, optional
32 oz. bag frozen tater tots, you may not use them all
10 oz. can cream of broccoli soup
10 oz. can cream of potato soup
1/2  cup milk, or a little more if needed
salt and pepper to taste
1/4 to 1 cup cheddar cheese, finely grated

Directions

Preheat oven to 350 degrees F.  Grease 8x8 or 9x9 pan.  In a small bowl, mix 1/4 cup milk with cream of broccoli soup.  Toss half bag of frozen broccoli cuts in soup.  Layer on the bottom of the pan.  Top with remaining broccoli cuts.  Sprinkle on cheddar french fried onions if using.  Mix cream of potato soup with 1/4 cup milk, an additional 2 Tablespoons if needed, to make enough to cover broccoli..  Spread on top of broccoli.  Top with 1/2 bag frozen tater tots.  Cook 50 to 60 minutes until bubble and tater tots are done.  You can add finely grated cheese and return to oven 1 to 3 minutes, if desired.
