Sausage Gravy Stuffing Casserole

This breakfast casserole is perfect for brunch or company breakfast.  Easy to make and delicious to eat!  What could possibly be better than sausage gravy in a casserole?!  Hmmmmm, I can't think of anything, can you?   Although I didn't make it ahead of time, I think you could easily make this the night before and pop in the oven for a busy morning breakfast!  If you do, please let me know!


Sausage Gravy Stuffing Bake
ingredients

1 package Stove Top Savory Herb Stuffing
1 lb Jimmy Dean reduced fat bulk sausage
1/2 cup onion, chopped or diced
4 eggs
2 cups low fat milk,  less as needed
1 - 1/2 cup low fat buttermilk, homemade sour milk*, less if needed
3 Tablespoons all purpose flour
4 oz. (more if desired) chopped or shredded 2% cheddar cheese

Directions:

Preheat oven to 350 degrees F.  Grease 9 x 13 pan.  In a large skillet, cook sausage over medium heat, breaking apart, for 8 to 10 minutes or until no longer pink inside.  Add onions after 5 minutes of cooking. Drain, if needed, and return to skillet.  Put all purpose flour in 4 measuring cup.  Add enough milk to measure 2 cups.  Stir milk and flour until flour is dissolved.  Pour over sausage, stirring continually over medium heat, until thick.  Remove from heat and stir in stuffing.  Let cool 5 minutes.  Break eggs in same measuring cup you used earlier (I don't like to wash dishes!), add enough buttermilk, or sour milk,  to measure 2 - 1/3 cups. Stir milk and eggs mixture in sausage mixture.  Pour sausage stuffing mix in greased pan.  Cook in preheated 350 degree oven 25 minutes to 30 minutes until soft set.  Remove from oven and top with desired amount of cheese.  Return to oven another 3 to 5 minutes until cheese is melted.  Enjoy!

*Add 1 Tablespoon vinegar to 1 cup 2% milk.  Let sit 5 minutes until curdled.
