Chicken and Stuffing in Crock-Pot

Chicken and Stuffing cooked in the Crock Pot (or your favorite slow cooker) is a great way to free the oven and your time.   




                                                       
We all know there will be leftover turkey during the holidays, right?   This is a great way to use it or precooked poultry for an easy meal while you are out shopping, working or busy with the kids.
                                                                               
Chicken and Stuffing in Crock-Pot
ingredients

2 - 6 oz boxes stuffing mix (I use Betty Crocker Homestyle Chicken) 
2 huge chicken breast halves or 
   4 cups cooked and chopped
2 1/2 cups chopped celery or
   4 stalks
1 huge sweet Vidalia (or another) sweet onion or
  2 cups chopped
2 Tablespoons margarine
4 Tablespoons all purpose flour
4  cups chicken broth
1/2 cup milk
salt and pepper to taste

Method:

If using fresh chicken;  put chicken breast and chicken broth in a pot.  Bring to a boil and simmer 20 minutes.  While chicken is cooking .. spray non-stick skillet with cooking spray.  Melt margarine in skillet over medium high.  Add chopped celery and onions, cook 10 minutes, stirring to prevent sticking and burning.  Season with salt and pepper.  Put stuffing in a large mixing bowl, put skillet aside.  Add cooked celery and onions, stir to mix.  When chicken is done, remove chicken from pot and let cool enough to handle.  Chop in bite size pieces.  Spray Crock-Pot or slow cooker.  Add chicken pieces.  Heat skillet to medium. Whisk flour and milk together and add to skillet.  Whisk or stir with fork, to prevent sticking.  When it starts to thicken, add 1 1/2 cups chicken broth.  Whisking continually for 3 to 5 minutes until thickened yet still a little thin.  Season with salt and pepper.  Pour over chicken and stir to coat.  Add 2 cups (more if needed) chicken broth to stuffing mix...tossing to coat.  Pour over chicken...there is a lot. Cook on high 4 hours.  Enjoy!
