Spinach Squares

I love spinach but it wasn't until recently that I decided I did.  I despised it as a child and would refuse to eat it, turning up my nose and closing my lips tightly.  Now, I eat it weekly baked or raw, I want it!   One of my twins eats it raw..he loves salads!  The other two boys, well I'm working on them.  Trying new ways.  They'll come around..in time.

Eggplant Bruschetta and Pizza

When I told my oldest son I was making eggplant parmesan the other day, he asked me to make him eggplant pizzas.  I am so glad he did!  I made both eggplant bruschetta and pizza.  Both are amazing!

Stuffing Bites

What do you do with all the leftover dressing/stuffing you have from the feast you cooked yesterday?  Make stuffing bites, of course!  You don't even had to wait for leftovers..just mix a box or bag of stuffing according to directions, add whatever you want to it, form into a shape, pan fry or bake.  There you go..simple and perfect!  Great for watching the game, as appetizers for your guest, or just popping in your mouth while wrapping presents!  Enjoy!

Stuffing Bites

Form leftover dressing/stuffing into shapes.  Spray skillet with non stick spray.  Brown bites on all sides.  Serve with Strawberry Cranberry Sauce or cranberry sauce.  Enjoy!

Greens and Cornbread Bites

Here is something a little different for you.  Greens and Cornbread Bites.  Yep...a true southern snack if there ever was one.  use your favorite Greens, fresh, frozen or canned.  This is a very forgiving recipe.  Adjust all ingredients to your liking.  Hope you enjoy these..
Greens and Cornbread Balls
makes 24

1 14 oz can Greens (doesn't need to be cooked) drained and squeezed thoroughly to remove liquid.  You can use 1 1/2 to 2 cups of your leftover cooked greens.

1/4 to 1/2 cup Roasted Red Peppers, diced

1/4 cup Onion, minced

2 slices Bacon,cooked and crumbled,

1/2 to 3/4 cup Pepper Jack Cheese, grated

Salt, Pepper, Hot Pepper Sauce, optional  Use whatever you use to season greens if they aren't already.  Season to taste.

1 to 2 cups Cornbread Stuffing Mix, may substitute cooked and crumbled cornbread

3 Eggs, beaten

Directions

Preheat oven to 350 degrees and grease cookie sheet

These are canned mustard greens, already diced.  I pressed the lid on them until the liquid no longer came out.
Mix greens,  diced red pepper (amount you like), onions, bacon, pepper jack cheese (amount you like).  Taste and then season with salt, pepper and/or hot pepper sauce, optional, to taste.

Add 1 cup cornbread stuffing mix, or crumbled cornbread,  and beaten eggs.  Add more cornbread stuffing mix or cornbread, as needed to make a mixture that is still a little moist.

Roll into walnut size balls, they will be moist,  and place on a greased cookie sheet.  Bake in a 350 degree preheated oven for 8 minutes. Turn pan around and cook another 5 -10 minutes.  They should be firm, with a tiny give when done.  As always, my oven cooks different than yours...adjust time accordingly.

Reid borrowed my camera and took pictures of his lego man cooking a fish while another may patiently waits at the picnic table.  <3

Oh My!  <3 and HUgs!

Aren't they pretty?

Sausage Cheese Balls

If you have ever been in the south during the winter holidays, I know you have eaten these!  We always called them just "Sausage Balls"  but there is a lot of cheese in them so...Sausage Cheese Balls they are!  I can remember these from way back when.  Seems there were always on the table of snacks when there were get togethers at Thanksgiving, Christmas and New Years.  I don't know why they were never fixed in the warmer months of the year.  Something I will have to find out!  Easy to make, Yummy to Eat!   ~smiles~

Sausage Cheese Balls
I made 49 from this recipe.  Mine aren't always the same size for some reason.

3 cups biscuit mix
1 lb bulk sausage
1-2 lb cheddar cheese 3-4 cups shredded..I used cut up chunks I had and got 3 cups

Preheat oven to 350 degrees
Spray cookie sheets (2)

Toss everything with a fork,

Mix with hands.

Shape into walnut size balls. Bake on greased cookie sheets (2) for 15-20 minutes @ 350 degrees.

Halfway through,  lift sausage balls up with spatula so they won't stick and turn pan around.  As always, My oven cooks different than yours.  Please adjust time accordingly.

Place a paper towels to absorb grease from the bottom.  Remove from paper towels, place on serving plate and serve with spicy or honey mustard.

Pumpkin Apple Bites

I made these thinking there would finally have a pumpkin pie I would eat.  I like pumpkin but have never liked pumpkin pie.  These turned out great.  A little pumpkin and apple with cinnamon and brown sugar in a hand held crust.  Very easy to make.  My hubby was eating them as fast as they came out of the oven.  We just love little bites of everything, don't you?

Pumpkin Apple Bites

1 -2 cups diced apples
1 - 2 cups diced fresh pumpkin

Dice apples.
Toss both with brown sugar and cinnamon.
Heat tortillas in microwave, a few at a time,  for 5 – 10 seconds.

Black Bean and Corn Taco Bites

A little Spicy.  A little Sweet.  These are perfect for an appetizer, and after school snack or meal.  I love anything to eat that is convenient..especially with my boys.

Black Bean, Corn and Turkey Bites
makes 24 bites

1 lb ground turkey
1/2 small onion
2 tablespoons cumin
1 tablespoon chili powder
1-2 tablespoon minced garlic, to taste..I used 2
1/2 teaspoon fresh ground pepper
sea salt to taste
1 15 oz can black beans, do not drain
1 10 oz can rotel, mild or hot, your preference
1 cup of sweet corn, frozen or canned
corn tortillas, cut in 2 1/2"  to 3" circles

mini muffin pan

Brown meat, drain if needed.
Add onion, cumin, chili powder and garlic to meat and cook onions until translucent.
Add cans of black beans, with liquid, and rotel.
Add corn and simmer until liquid thickens

Preheat oven to 350 degrees

While simmering cut corn tortillas in 2 1/2” - 3" circles. Squares would also be cute.

Once mixture is cooked, heat the circles, or squares of corn tortillas in the microwave, or skillet, for 8-10 seconds (adjust your time if needed) just to heat and make pliable.

Fit in hole of muffin tin and add mixture.

Cook in a preheated 350 degree oven for 6-10minutes,
until set and starting to brown.

Take out of tin and plate.  Garnish with shredded cheeses and lettuce, sour cream, green chilies…whatever you top your taco with.

Pepperoni Cheese Pull Apart Bread

Do you want something fun and delicious to snack on?  Bread, pepperoni, cheese and a hint of garlic perhaps?  Well, here it is!  Just for you!!!
It was rainy Sunday morning and after baking a loaf Whole Wheat Banana Bread,  I took out a loaf of frozen bread.  Not having anything particular in mind…I kept thinking about the possibilities there were given with a loaf of unbaked dough.   Looking in the refrigerator made it easy to decide…a half a stick of pepperoni and low fat cheddar cheese.
