Apple Cider Spiced Pecans

I love fall!  And while it is still hot as blazes here, I can dream of cooler weather with the help of fresh pecans and apple cider.  These Apple Cider Spiced Pecans are perfect in every way.  Besides the amazing taste and crunch and goodness overall, my non-pecan eating son (I know, who would have thought?!) will now eat pecans!  Yes!

Brown Sugar Apple Pie

I suppose this could be called a cobbler since there isn't a bottom crust.  However, I've made an Apple Pecan Cinnamon Roll Cobbler that had a bottom and top crust, so that could be considered a pie.  Or perhaps..

Pumpkin Apple Bites

I made these thinking there would finally have a pumpkin pie I would eat.  I like pumpkin but have never liked pumpkin pie.  These turned out great.  A little pumpkin and apple with cinnamon and brown sugar in a hand held crust.  Very easy to make.  My hubby was eating them as fast as they came out of the oven.  We just love little bites of everything, don't you?

Pumpkin Apple Bites
makes 16-24 (we kept eating the filling so not certain) ;D

1 -2 cups diced apples 
1 - 2 cups diced fresh pumpkin
1/2 cup brown sugar
1-2 teaspoons ground cinnamon
pinch of salt
flour tortillas, I used 6” and got three 2 1/2 - 3” circles  You can use a small mouth jar ring


Preheat oven to 350 degrees
Cut your tortillas into circles
Peel pumpkin with a vegetable peeler, dice 
Dice apples.
Toss both with brown sugar and cinnamon.
Heat tortillas in microwave, a few at a time,  for 5 – 10 seconds.
Fit into mini muffin tins.
Add pumpkin and apple mixture.
Cook in a preheated oven for 5-12 minutes.  Until set and tortilla cups are starting to brown.

Cooked Apple Coffee Cake

I had apples to spare but then again, who doesn’t this time of year?  Don’t get me wrong, we love apples and are delighted that they were given to us.  ~smile~  What to do with all of them is another thing.  We cooked the CIS Bottomless Apple PieApple Pie Bread and Apple, Jalapeno and Cheese Bites.  It was time for something different.

I started cooking diced apple not knowing what I was going to do with them.  I finally decided to make a Sour Cream Coffee Cake, Adapted from a delicious recipe given to me by our dear friend Robin, incorporating the cooked apples and walnuts (only I was out of the nuts) .  The result…Delicious!  Hope you enjoy it also!

Apple Pie Bread

I'm always looking for something Yummy and Easy  to cook for My Boys!  I am finding frozen dough to be my friend!  Stuff anything in it and it is bound to be good!

Last night I took out two loaves, cooked one and put the other in the refrigerator.  Got up this morning and remembered the apples my step daughter, Carla, had given us.  MMMM... Apple Pie in loaf of yeast bread!  Oh My Stars...It is GOOD!  Hope you like it!
