Frozen Banana Yogurt in the Freezer

My boys love ice cream, frozen yogurt and popsicles.  I have been trying to make healthier recipes for my boys....trying.   Since they have been asking for ice cream for days now,,  I thought I would make frozen yogurt instead.  Using four ingredients it is easy peasy.  Get your blender out and make this delicious frozen treat.  
The hardest part is the wait!

Dark Chocolate Zucchini Banana Cake

My precious oldest son made 6 A's and 2 B's on his final report card for third grade!!!!  I wanted to make his something special that was a healthier than my usual way of cooking.  I asked and my gorgeous friend, Ann of Sumptuous Spoonfuls, shared her recipe for Decadent Double Chocolate Zucchini Bread I loved the recipe the moment I saw it.   I love ALL of Ann's recipes for that matter!  
A quick trip to the store for zucchini, braving Tropical Storm Debby's rain bands and a stop by the Dr.,  I was bitten and scratched by one of our kitties this morning, I was all set to cook.  The bread...my boys call it cake, it's that good, has the rich taste a dark chocolate, a hint of banana, not too sweet (you can adjust sugar to your taste), and very moist!  A hit!  A little dense and oh so good! 
Well, what are you waiting for?  Go pick, or pick up, some zucchini!  <3 and hugs! 



Dark Chocolate Zucchini Banana Cake

2  squares unsweetened chocolate, 1 oz each, melted
1/4 cup unsweetened cocoa
1 1/4 to 1 1/2 cup granulated sugar
3 eggs
1/2 cup nonfat yogurt
1 ripe banana mashed, approximately 1/2 cup
2 1/2 to 3 cups grated zucchini,  I used one medium
1 teaspoon vanilla extract
1 cup unbleached whole wheat flour
3/4 cup all purpose flour
1/4 cup milled flax seed
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon, optional
cinnamon sugar to sprinkle on top

Preheat oven to 350F.  Oil or spray 9" spring form or cake pan.  
Melt chocolate according to directions. Cool.
Add cocoa, sugar, eggs and yogurt.  Mix well.
Sift together all dry ingredients.  
Add to wet ingredients and mix to incorporate. 
Pour in pan and bake in preheated oven for 30 minutes.
Turn and cook another 10-25 minutes.  Yeah, I know it's a wide range in time.  
I kind of lost track.   As always, my oven cooks different than yours.  Please adjust time accordingly.
It's done when toothpick, skewer or thin knife comes out clean.
Cool on rack and wait as long as you can.  Okay, go ahead and cut it now.  You deserve it!
Sprinkle with cinnamon sugar and enjoy!

Banana Mango Frozen Yogurt

AWWWW.....Brain Freeze!!!  This was the effect of eating too much of this, too fast!!!!!
Lucas is sick and wanted frozen yogurt.  Hubby didn't get a chance to get any while filling prescriptions today, so...I made some!  It isn't overly sweet so add the orange juice if you like it on the sweet side.  Hope ya like it!  We did!!!



Banana Mango Frozen Yogurt

3 bananas
1 9 oz can mango nectar, I buy Goya
1/4 cup greek yogurt
2-3 Tablespoons orange juice concentrate, optional if you want it sweeter


Pour mango nectar into a freezer worthy container.  Place in freezer along with bananas, in peels.  Freeze for 3 hours or so.  
When ready to make....  
Cut bananas and mango nectar into chunks.
Put into food processor or blender, along with greek yogurt.  
Pulse until incorporated.  Serve immediately or place in freezer for later. 
Makes 6 4oz servings.  Easily doubled.  You will need to.  Enjoy!  <3 and hugs!

WW Cranberry Orange Banana Nut Bread

Sick, Sick, Sick!  That's is what we have been, forever it seems, around here!  We get well and 5-10 days later, sick again.  A vicious cycle that I attribute to all the boys being in school this year.  Teachers are saying that this is what is happening with most of the children.   I'm not liking it.  No matter how much I wipe down, spray or douse everything, and everyone for that matter...the "sick", as Reid calls it, comes back to us.

I wanted to fix something for the boys and tried to do something a little healthier for them this time.  Sweet and a little tangy, nutty and yummy, with glaze or without out (my preference) it is a keeper here!  <3 and HUGs!


Whole Wheat Cranberry Orange Banana Nut Bread

1 cup all purpose flour 
1 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 to 1 teaspoon ground cinnamon, use least amount and add more if desired
1 cup sugar, a little more if you need it
1/4 cup unsalted butter, cold and sliced
1 egg, beaten
frozen orange juice concentrate thawed and undiluted*...to use in bread, 3/4 cup and topping, 1/4- 1/2 cup
1 teaspoon vanilla
1-2 bananas, mashed
1/2 to 1 1/2 cup chopped pecans
1 1/2 to 2 cups chopped/sliced thin fresh cranberries

Directions 

Preheat oven to 350 degrees and spray loaf pan or bundt...this will be shorter.

Sift first 6 ingredients together in bowl
Stir in sugar
Cut in butter....flour will turn into a little coarse, sandy looking
Mix in egg, vanilla and 3/4 cup orange juice

Fold in banana, sliced/chopped cranberries and pecans 

Pour into greased desired pan

Bake in preheated 350 degree oven for 15 minutes.  
Rotate.
Cook another 10 minutes and check.  Checking every few minutes.

It is done when toothpick inserted in middle comes out clean and top is light brown.

Mine was done in 35 minutes.
As always, My oven cooks different than yours.  Check at earliest time and adjust cooking time accordingly.  
Let sit 10 minutes, run knife around edges to loosen and invert onto rack.

Cranberry Orange Drizzle

1/2 to 2/3 can whole cranberry sauce
1/4 to 1/2 cup frozen orange juice concentrate
1 cup confectioners sugar, adding more if you like it sweeter

Whisk all together and drizzle over individual pieces.   

You can also poke holes in the bread with a bamboo stick while bread is still warm.  Warm the glaze and drizzle over bread.  Make certain you have a plate underneath to catch the run off.  

*Note....I used frozen orange juice concentrate because that was what I had.  You can use 1 Tablespoon grated orange peel and 3/4 cup freshly squeezed orange juice for the bread, instead.
You can also substitute freshly squeezed orange juice with  1-2 teaspoons grated orange peel for the drizzle.

My Precious Great Aunt Louise’s Rice Pudding <3 and my Fruity Rice Pudding

My parents and Grandparents have all passed away.  I don’t talk with my sisters…..often.  I have cousins I chat with through email and facebook.  I moved away from home at the age of 20 and with it I left behind the opportunity to gather the Treasured Recipes of My Family.  I have asked others to share theirs with me.  Through this I have reconnected with my very Sweet Cousin, Linda.  She is so special to me and is always there when I need her.  She graciously shared a few Treasured Recipes with me of our family.  (Thank you so much Linda…Love You!) This Rice Pudding Recipe was her Precious Mama’s.  I know you will enjoy it! 


My Great Aunt Louise.  I remember when I was very young…She lived nearby.  We didn’t have any other family that lived in the state, it was such a Blessing to share time with her and have family closeby.   When My Precious Mama was very sick, and in the hospital,  Aunt Louise came to stay with us…My Darlin’ Daddy, my sisters and I.  She helped take care of our family and our home.  She was a rock for us and I am forever grateful for her and the memories I have of her.  I truly Love and Miss her…..<3


Great Aunt Louise’s Rice Pudding

Ingredients
2 cups cooked rice
4 eggs, beaten
3 cups milk
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup raisins…optional

Directions
Beat Eggs. Stir in sugar. Add other ingredients. Stir. Spray oven proof
casserole dish with Pam. Pour mixture into dish. Set dish in pan of hot
water and bake at 300 degrees for 90 minutes. After 30 minutes of cooking
insert spoon at edge of pudding and stir from the bottom to distribute
rice and raisins.  

Fruity Rice Pudding

I changed mine a little by adding 1/4 to 1/2 pureed banana 
I used a whole banana, pictured above and it was great, but it was a little too much
1 cup crushed pineapple, drained
1 1/2 cups diced apples
increased cinnamon to 3/4 teaspoon
decreased vanilla to 1 teaspoon
Place in a crock pot and cooked on low for 3-5 hours, depending on your crock pot.  
Stirring occasionally once it starts to thicken.

Lucas' PB Choco Mix Banana Chunks

My Eldest said he wanted to create a recipe for dessert.  Here is his creation!




Lucas' PB Choco Mix Banana Chunks

Bananas
Peanut Butter
Chocolate Milk Mix

Peel bananas and slice.  Smear peanut butter on the slices and roll in chocolate milk mix.  Put on tray and freeze what you don't eat.  BUT, before they are eaten...Throw a kiss at them so they are made with LOVE!  
Wasn't that the sweetest?  He made me wait to put them in the freezer until he did that.  ~smiles filled with love~
