We are loving summer time and all the fruits of its labor. We especially love cantaloupe, we found it on sale! Put it in anything and we will eat and drink it!
Today the boys had fun making their own sandwiches and salads with cantaloupe and bacon. We had BLT&C(antaloupe) sandwiches and salads.
The sandwich was made on lightly toasted wheat bread. With iceberg salad mix, homegrown tomatoes, bacon and thinly sliced cantaloupe seasoned with salt and pepper. This has a sweet, crunchy, salty yumminess about it. The Boys had grain, vegetables, meat and fruit all in a sandwich! Freshly made lemonade and a frozen yogurt stick finished their meal.
The salad was the same...minus the bread. We somehow forgot to add the shredded cheddar cheese on top. I hope you will give these a try...I think you will be pleasantly surprised.
I am going to make a larger salad with layers of fresh spinach leaves, teriyaki grilled chicken breast, thin slices of yellow and red peppers, homegrown tomatoes and cucumbers and topped with cantaloupe seasoned with salt and pepper.
