It hot outside! We want something fresh and cold to soothe the humidity and down right Heat we have here. My husband bought the biggest cantaloupe I have ever seen. When I cut it up it filled a huge rubbermaid bowl.
I remembered I had some light simple syrup* leftover from putting up nectarines a few days before and thought about making cantaloupe ice.
Very simple recipe....2 cups pureed cantaloupe add 1/2 cup light simple syrup* and give it another swirl. Put in a shallow container in freezer for 45 minutes or until it starts to set around the edges. Scrap around with a fork...back in freezer and check every 30 minutes or so, depending on your freezer. Breaking the cantaloupe mixture. It took 3 hours from start to finish. Enjoy! :D

*Boil 6 cups of water..take off heat...add 2 cups sugar stirring until desolved and cool.
