Strawberry Lemonade

Summertime:  pool time, fun time, all the time!  Lemonade is always a beverage we keep in the fridge during the summer.  It just speaks of summer.  I don't know why we don't make it in the winter when lemons are in season and plentiful.  I'll have to start. 

This recipe gets better the longer it sits in the fridge.  Although, it doesn't last that long around here.  One of my twins eats lemons .. just as they are...see his little fingers trying to fish a slice out.  I have to sweeten them in some way.  I may have to make this at night next time.  Get your lemons and fruit ready..we are making lemonade!   Enjoy!

Easter Carrot Bags

So cute!  The boys are out of school this week and I wanted to start Easter fun!  I dyed some eggs..some worked, some didn't.  Some were beautiful some, well, not so.  ~smile~
I've seen those cute carrot bags filled with goldfish in Wilton decorating bags on the internet.  For me...they are way too expensive.  I decided to make the carrots on my budget using plastic storage bags.  Super easy and a whole lot cheaper.  Have fun!

Filled Sugar Cookies and Afternoon of Fun!

Banana Nut Cookies

Yesterday, we started our day by going out to eat.  While the food wasn't the greatest...being together was.  After brunch and a quick trip to the store, seems we do that far too often, we came home only to leave a few minutes later.  I took the boys to the playground.  They had fun sliding, swinging and climbing.  I had fun watching, taking pictures and feeling so blessed that I must have looked silly walking around with a continuous smile on my face.  ;D  SEE!

We came home to find a huge container of our Son In Law's delicious spaghetti sauce!  We absolutely love it and consider it a treat when it is given to us.  I cooked fettuccine for the pasta and a sprinkling of freshly grated parmesan topped it off.  A salad of romaine, tomatoes, cucumbers and a little parmesan.  Toasted slices of a baguette, I topped some with garlic butter while Reid made pizzas out of the others.

For dessert we had cookies.  I used sugar cookie dough and added fillings.  The Boys Loved Them!  We added peanut butter, chocolate chips, junior mints, peanut butter and chocolate chips, a candy bar and my favorite...banana nut!

Super easy to make.  All you need is...

Sugar Cookie Dough and Whatever filling you want.  A dab of this, a sprinkle of that.

For all cookies.......

Flatten a heaping tablespoon of cookie dough.  Add your desired filling.  Fold over.  Add a little more dough if needed to completely seal.  Roll into a ball.  Place onto an ungreased cookie sheet.   Cook in a preheated 350 degree oven. Cook 5 minutes, turn pan around.  Cook an additional 3-6 minutes, checking after 3 minutes.  Cookies are done when edges start to turn golden brown.  Keep on 1-2 minutes on cookie sheet before you transfer them to a cooling rack.  I know you can't wait for them to cool...go ahead and eat them warm, I won't tell.  ~smile~
As always..My oven cooks different than yours, please adjust time accordingly.  

For the banana nut cookies, I sliced bananas.  Sprinkled with lemon juice , optional, and brown sugar.  Chopped a few walnuts.

For the candy bar...Cut to fit inside the cookie.

All others...just fill, fold and roll.

To a tablespoon of sugar cookie dough, flatten out and add filling.

Fold over, add a little more dough if needed, and roll in a ball.

New Year's Eve...Our Country Way to Celebrate

It's New Year's Eve!  My Step Daughter, Bonny and Son In Law, Dan, will be celebrating with us tonight.  I hope Carla, my other Step Daughter, can stop by also.  The boys are SO excited!  We are just simple country folks that will be outside around the fire while the children play.  Bringing in the New Year (if we can stay awake) with family.  It doesn't get any better, does it?  Spending time with your loved ones..family and friends.  Won't you join us?

Our menu is simple.  Lot's of snacks....Finger Foods.  One hand always eating while the other shoots baskets, shoots darts, pushes a swing and taking turns running the remote control boat in the pond.

Mummy Pizzas

The boys were out of school last Friday.  After playing outside for most of the day, they wanted to make these to share with you.  So easy to make and Fun for this time of year!

Mummy Pizzas
english muffins
pizza or spaghetti sauce
string cheese
black olives
1 or 2 slices red pepper minced

Half muffins if necessary.
Have children pull cheese into thin strings.
Let children spoon sauce over half of english muffins.

Top with cheese strings.
Placed a sliced black olive where I should be.  Or, anywhere and everywhere else!  ;D
Add a dice of red pepper in the center of each olive.

Bake at 350 until cheese is soft.  It will not melt.

Day Trip!

We love to go to the Marine Science Center.  It is so much fun and teaches the boys a lot about our Marine Creatures, Birds and their habitats.  It shows how others care enough to nurture hurt animals back to health.
It is a place where ill and injured Sea Turtles, Birds, and Marine Life are taken.  Some are released when well…others find this their forever home. 
The Boys had an Amazing time!  They looked at native birds that were being nurtured back to health.  Saw Injured Sea Turtles that may one day be released back into the ocean.  Were able to pet a pine snake.  Saw different species of sea creatures and corals.  But the Best and most Treasured event of the day was being able to pet Sting Rays!  The Boys were full of wonderment and delight as they pet the curious, prehistoric looking Sea Creature.

Pizza Slices

Time for more fun!  Today, for lunch, we made Pizza Slices.  My Boys have such a great time making these delicious and fun pizza slices.  We hope you do too!  ~hugs~

Pizza Slices

1 tube Cresent Rolls
Pizza or Spaghetti Sauce
4 String Cheese
Toppings of your choice

My oven cooks at a high temperature.  The cresent roll tube said to preheat to 375 degrees...I am cooking at 325 degrees.   You know your oven...set it just like you would when cooking these without the fun on top.  :D

Unroll and arrange wedges on two cookie sheets.   I lined mine with parchment paper, you don't have to. 
Now, the fun begins!  My Boys put the spaghetti sauce on top of the wedges, over and beyond.  ~smiles~  They then pull apart the string cheese.  You can use already grated cheese but this adds more hands on fun.
Put the cheese on and you choice of toppings. 
I cooked mine for half the time stated.  Then turned the broiler on low just to heat up the cheese more for, 30 seconds to 1 minute keeping a watch on the slices with the door open.
Please note, the cheese will not melt like grated cheese.

For dessert you may want to buy another tube of cresent rolls and make these also,  Red, White and Blueberries

Welcome and Hugs!

Very soon I will be posting Fun Days With My Boys!  It will be pics and stories of the fun we have.  We don't have to spend a lot of money to do it.  Just a day at the park, the Childen's Museum, Marine Science Center,  a special birthday party for the oldest Dolphin in captivity..Nellie,  as she turned 58!  We even have fun at Walmart and I am never without my camera to document it.  :D
