Maters and Rice

Thoughts of Mama standing at the stove making this delicious dish from her canned tomatoes.  Sometimes she would fry up some thick rind bacon to eat with this and make a batch of homemade buttermilk biscuits!  Comfort in the form of food is the greatest healer.  It can calm you when you are upset.  Bring a flood of memories (as now) of the special people and times shared with them.

Make a pot of this, feel the comfort from within and make some memories with the ones that are special in your life.  <3

Very easy to make.  I don't have any canned tomatoes...mine came from the store in a can.   Wish we had a Garden other than one the boys planted to see how it grows.  They did a great job with theirs but it was ust to get them started with the love of growing their own food.  How it makes the taste richer in every aspect.  They will be growing another garden, hopefully a BIG ONE,  for the fall.  Stay tuned.  <3

Maters and Rice

28 oz can of Diced, Crushed or Whole Tomatoes (if whole, squish with your hands)
1 cup Long Grain White Rice
1 Tablespoon Bacon Grease, optional
1/4 teaspoon Ground Pepper
1/4 teaspoon Salt
1 teaspoon Sugar, optional 

Bring everything except rice to a boil over medium heat.  Add rice when boiling..stir, cover and simmer for 15 minutes.  Stirring occasionally.  If rice isn't done cook longer,  checking every minute.  It should be ready in 5 more minutes.  Taste and adjust seasoning, adding a little water, if needed.  Just a hint of sweet, a pip of the pepper and a deep, rich taste of Maters.  Enjoy!

Mama’s Birthday and Food of Love

Today would have been my Precious Mama’s 79th Birthday.  She passed away over 19 years ago.  With her passing went a piece of my life and heart.  She was such a Beautiful Woman….. Inside and Out.  She would give her all and all she had to give.  If you needed anything at all…She would be there for you.  Giving a helping hand, whether in your home or your life.  If you needed something, she was there for you.  She would ease your pain..be it a busted chin (mine when I fell over my hula hoop) or broken heart.  Her love surpassed those of many.  Always willing to give and ask nothing in return.  Her hugs were warm and comforting as her food.  Comfort came from her heart and meals she prepared for us and others.  There is no greater LOVE than that of a Mama and her children.  The bond is irreplaceable  I Love and Miss her daily.  As I prepare food for my children..I have precious memories of my Sweet Mama doing the same for us.   I feel her withus as we prepare her Food Of Love!  Until We Meet Again……

Grandma's Blueberry Cake

This cake has been around for a long time. My Precious Mama,  :wub: would be asked to make it at every get together.   <3

Mama's Blueberry Cake

1 cake mix, yellow
1 large tub of Cool Whip
8 oz of cream cheese, softened
1 cup confectioners sugar, more if needed
1 large can of Blueberry pie filling, make your own

Bake cake according to directions using 2 or 3 pans*. Cool. 

Mix softened cream cheese and confectioners sugar until fluffy. Fold in Cool Whip. Put one half, or third, frosting on a layer and top with one half, or third pie filling. Repeat with other one or two layers and finish sides of cake with remaining frosting. Keep refrigerated. 

*I used two pans.  Yum!
