Crock Pot Pumpkin Spice Oatmeal

It’s Fall!  Hopefully, we will see a change in the weather, something other than rain and heat would be welcomed.  How is the weather in your part of the world?  Wishing you comfort and sunshine, wherever you are.
I seem to think of using pumpkin when Fall is officially here and visual at the market.  Making me want to take them home to decorate, display and eat them.  I did buy a pie pumpkin a couple of days ago but ended up using canned pumpkin for this Crock Pot Pumpkin Spice Oatmeal.  This is the first time I have cooked oatmeal in the crock pot and very pleased I did.  It was like eating a Pumpkin Spice Muffin in a bowl.  Warm and soft and quite filling.  This is definitely a keeper and will be made often.

Chunky Banana Nut Dark Chocolate Chip Oatmeal Spice Cookies

Yes, you read it right!  These cookies are great!   At least my boys think so.   Dark chocolate, spices, bananas and nuts.  You can add dried fruit, too, if you wish.  With flax seed, wheat germ, wheat and soy flours, and of course oatmeal...what's not to love!   I bet you could even get away with eating these for breakfast, I did!

Chocolate Oatmeal Cake For My Birthday

Yep, it's my birthday.  My 50th Birthday.  One half of a century old.  I have boys.  A 9 1/2 year old and 5 1/2 year old twins.  Hubby of 24 years.  Beautiful friends.  Some loving family.  Dogs, cats, mini horses, big ole pigs and an old goat.  I'm a Blessed and Happy Old Girl!

Here is my birthday cake.  I didn't want an overly sweet cake.  This is dense, moist, rich and chocolaty.  You may want to use regular cocoa and semi sweet chips if you want a sweeter cake.  Love and hugs!

Homemade Instant Oatmeal

We love oatmeal at our house yet each boy wants their's a bit different.  I've seen this on the internet for some time now and I decided to make my own instant oatmeal so they can each have their own favorite.   Brown or regular sugar, sugar substitute, cinnamon, nuts, coconut, chocolate chips...the possibilities are endless! Putting the Instant Oatmeal in jars so they can be easily accessed and used in the desired amounts, has been great.   I'm cold and ready to make some Instant Oatmeal come on and join me.
