Baked Potato Chip Crusted Onion Rings

Potato chips and onions rings meet bringing happiness all around. ~smile~  Try different flavored potato chips for unique onion rings!  Vinegar and salt.  Barbeque.  Sour Cream and Onion. Cheddar.  Chipolte.  Ranch.  The possibilities of flavored onion rings are endless!  Which flavor will you try?

Baked Potato Chip Crusted Onion Rings
Ingredients

2 medium to large onions, sliced thin and separated into rings
1 cup milk
1 egg
10 to 15 oz. bag potato chips, try different flavors, crushed
1/2 to 1 cup cake flour
seasoning, if desired

Directions:
Preheat oven to 400 degrees F.  Crush potato chips in processor or put in a bag and crush with hands.  Put in a bowl, bag or on a plate.  Carefully, slice onions into thin slices, separate into rings and put aside.  A mandolin works great for uniform cuts.   In another bowl, beat egg into milk.  Put cake flour in a bowl, bag or on a plate.  Make room on counter and line up: cake flour, milk and egg mixture, crushed potato chips, and greased cookie sheets.  Dip onion rings in cake flour.  Shake off excess and put in milk and egg mixture. Take rings out with fork, shake excess milk mixture off and put in potato chip crumbs a few at a time, pressing, or shaking bag, to coat. Onion rings may not be completely covered.  Put on greased cookie sheets.  Bake 10 to 15 minutes until crisp and golden.  Plate and serve.  Enjoy!

Onion Dip

I am always trying to find ways to make the food we love without the extra cost.   Three hungry boys can put a damper on my pocket.  A little help here and there is always welcome.   This fits the bill.  ;)   Reminiscent of the onion dip my precious Mama made with Lipton's Dry Onion Soup Mix.  You will love this!  Hubby said it needs more onions, I say it is just right.  ;)  Add more onions, and/or dried minced onions, to suit your taste...or those devouring the dip.  ~smile~
Summertime;  fast food, finger food, dipping food, yes food!

Onion Cheese Bread

This homemade onion and cheese bread is perfect for sandwiches or eating plain right out of the oven.  Top slices with additional cheese and broil in the oven to serve with a pot of Tomato Soup.  It's great with Hamburger Vegetable Soup. Slice and nest your favorite cheese between two slices for the best grilled cheese sandwiches ever.  If you like onions and cheese...this is your bread!  Enjoy!

Fried Potatoes, Green Peppers and Onions

 It's National Potato Day Y'all!

We love potatoes!  Actually my boys like more of the french fry version but hubby and I love just about any way you can fix them.  This is a favorite.  I can see my sweet Mama cooking this many, many years ago.  ~smile~
What's your favorite potato dish?  I continue to fix them different ways with hopes of them finally liking them as we do.

I just love the smell of onions and green peppers cooking away!  Throw in some potatoes slices and I can make a meal of this dish.  My precious Mama would brown hamburger meat first then add the potatoes, onions and peppers.  Sometimes I add mushrooms, also.
Grounded beef or turkey can also be added.
Served with a hunk of bread and this is comfort food to me.

Fried Potatoes, Green Peppers and Onions

4 to 6 medium potatoes, however many you need
1 small to medium onion
1 small green pepper
sea salt, to taste

freshly ground pepper, to taste

coarse ground garlic with parsley, to taste

Cut potatoes into slices, place in bowl and covered with water with a teaspoon of salt.  Refrigerate. Keeps them fresh and they don't turn.

Spray skillet and heat to medium/medium high. Add potatoes and sprinkle with salt, pepper and garlic.  Add onions and peppers...season again.
Cook until a little brown on the bottom and flip.  Cook until all vegetables are tender and brown.

Mini Sausage and Onion Frittata

I woke up at 4 am this morning.  Something I usually don't do but I Love being up before everyone else in the house.  I get to experience my boys as they walk in with heavy steps, rubbing their little eyes to see what smells so good in the kitchen.  That is right up there as one of the best moments for me as their Mama.  <3

This morning I made Mini Sausage and Onion Frittatas.  You can use any combination of meats, cheeses and vegetables.  They are easy to cook up and make smiles as your little ones get finger food for breakfast.   <3 and Hugs!

Spray mini muffin pan(s)

Beat eggs.
Add onion, sausage and salt and pepper if desired.  Mix.
Spoon into mini muffin pan(s).  Mine made 22.
