Cookin' Won't Wait...Time For Soup

I Love My Boys and I Love To Cook!  However, some days…sick days, I am not thrilled to be cookin’.  My Boys are barking and not acting sick at all.   ~exhales~   I am absolutely thrilled that they don’t act sick even when they are.  I, feeling sick as a dog…not certain where that came from but have always said it, would like nothing more than to go back to bed, watch cooking shows and read cookbooks all day! 


So, What am I doing?  You guessed it…in between the nebulizer and kleenex, I am Cookin’!  Seeing how I am the one that “feels” sick and HAS to cook.  It is my choice.  I want comfort food!   Food like My Precious Mama would make.  I made Potato Soup.  Hearty with skins and pieces of potatoes, dices of ham and celery in it.  Very peppery, buttery and creamy.  I am also cheatin’ and got a loaf of frozen bread out so I can bake it later to eat a huge piece covered in butter.  Hey, when you are sick…you get an off day of watching the diet.  My rules! 


Next time you are sick…drag out the soup pot and start cookin’…<3 and Hugs!






 Hearty Potato Soup



Ingredients 

1 1/2 lb potatoes
I used little buttery ones and left them whole with skins on.  Use whatever you have and cut smaller if you need to.
Water, or broth, to cover potatoes an inch or so.
1/2 stalk celery, diced
1/2 cup onion, diced, if you want.  I didn’t today..wasn’t in the onion chopping mood. :D
2 cups ham, diced
1-2 teaspoons salt, depending on your taste
1/2 teaspoon ground pepper…more or less depending on your taste
1/2 cup milk
1/8 – 1/4 cup flour…start with less and add more if needed. 
just enough water to mix flour with
1-2 Tablespoons butter or margarine

Directions

Bring potatoes and 1 teaspoon salt, to a boil and cook until tender.
Smash and mash in pot.
Add celery and ham.
Add enough water to flour to mix and get lumps out.
Add slowly to pot..boil at least 3 minutes to get the flour taste out.
Add milk.
Simmer and keep stirring to keep from sticking. 
Add more milk, broth or water if it gets too thick.
If you aren't going to simmer for awhile, add the celery with the potatoes


Note....I think I should have made more!  ;D
Next time I will double this.
