Ranch Potato Salad

I don't like Miracle Whip or Mayonnaise!  My husband likes potato salad so I decided to make it with Ranch Dressing instead.  Turned out great!  Give it a try.  :D




Ranch Potato Salad

     
2 lbs small red potatoes..skins on and cut in cubes

2-3 boiled eggsyellow and/or red pepper

sweet onion

4 slices of bacon, cooked

1/2 - 3/4 cup ranch dressing

Boil potatoes in salted water until fork tender. Drain. Put back in pot to dry out some. Chop peppers and onion and eggs into equal size pieces. Put potatoes in bowl, add peppers, onions, eggs and ranch. Toss to coat. Top with crumbled bacon. Yum! 


*note*  save the potato water to drink ;)
