Pumpkin Ginger Bread

Here is yet another pumpkin recipe, this time with more ginger to make it Pumpkin Ginger Bread.   Not a hearty gingerbread taste, but a hint of the classic gingerbread which was what I wanted.   Oh my it was good!   My middle son, the oldest twin, decided to help himself the best way he could.   I couldn’t get angry with him…no matter how the bread looked when I got back to it.   Love and Hugs!

Pumpkin Ginger Bread 

1 3/4 cup King Arthur Unbleached All Flour
1 1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ginger or more to taste
3/4 to 1 teaspoon cinnamon or more to taste
1/4 to 1/2 teaspoon nutmeg or more to taste
3/4 cup sugar
4 Tbsp molasses
2 Tbsp lemon juice, optional
1/4 cup oil
2 eggs
1/2 cup coconut milk or milk
1 cup packed pumpkin puree, not filling

What to do

Preheat oven to 375 degrees F.
Lightly grease 9 x 5 loaf pan
Sift dry ingredients and sit aside.
Whisk together eggs, oil, molasses, sugar, coconut milk.
Add dry ingredients, stirring until moist.  Do not over stir.
Fold in pumpkin, you do not need to mix it all in. 
Cook in preheated oven for 45-60 minutes.  Done when toothpick comes out clean.
Cool in pan 10 minutes, run a knife around edges, flip out and cool on rack or eat warm.

Pumpkin Spice Bran Muffins

Another muffin recipe for you to enjoy.  Muffins are so easy to make and eat.  This one if full of bran, pumpkin, spice and the dark chocolate chips I added.   Eaten as a snack or breakfast is alright with me.  Enjoy!

Pumpkin Muffins

I made these at least 5 times last week for my boys!  They just love them!  They sneak in the kitchen, pretend to do something and the next thing I know I hear the sound of running feet and a discover a missing muffin!   LOL  I'm telling you......You better put some aside for yourself if you want any.



Pumpkin Muffins

1 cup unbleached whole wheat flour
1 cup unbleached all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon ground cinnamon
1/2 teaspoon ginger, optional, I didn't use
1/2 teaspoon nutmeg, optional, I didn't use

1 cup brown sugar, packed
3 Tablespoons unsulfered molasses
1/3 cup oil
2 eggs
1 cup buttermilk
1 cup pureed pumpkin
1/2 cup nuts, chopped fine, optional
1/2 cup coconut, optional
1/2 cup dark chocolate chips, optional

Toppings

pumpkin seeds
coconut
streusel

Method

Preheat oven 375 degrees F.
Grease or put liners, in muffin pans.

Beat eggs, brown sugar and molasses until light in color.
Beat in flour, baking soda, salt, cinnamon and additional spices if desired,
Add buttermilk while mixing until incorporated.
Stir in pumpkin and any optional ingredients.
Fill muffin cavities 2/3 full.
Bake 8 minutes and turn pans around.
Cook another 3-5 minutes, depending on your oven, more or less.
Done with toothpick comes out clean.
Enjoy!

Pumpkin Apple Bites

I made these thinking there would finally have a pumpkin pie I would eat.  I like pumpkin but have never liked pumpkin pie.  These turned out great.  A little pumpkin and apple with cinnamon and brown sugar in a hand held crust.  Very easy to make.  My hubby was eating them as fast as they came out of the oven.  We just love little bites of everything, don't you?

Pumpkin Apple Bites
makes 16-24 (we kept eating the filling so not certain) ;D

1 -2 cups diced apples 
1 - 2 cups diced fresh pumpkin
1/2 cup brown sugar
1-2 teaspoons ground cinnamon
pinch of salt
flour tortillas, I used 6” and got three 2 1/2 - 3” circles  You can use a small mouth jar ring

Directions 

Preheat oven to 350 degrees
Cut your tortillas into circles
Peel pumpkin with a vegetable peeler, dice 
Dice apples.
Toss both with brown sugar and cinnamon.
Heat tortillas in microwave, a few at a time,  for 5 – 10 seconds.
Fit into mini muffin tins.
Add pumpkin and apple mixture.
Cook in a preheated oven for 5-12 minutes.  Until set and tortilla cups are starting to brown.
