Strawberry Lemonade

Summertime:  pool time, fun time, all the time!  Lemonade is always a beverage we keep in the fridge during the summer.  It just speaks of summer.  I don't know why we don't make it in the winter when lemons are in season and plentiful.  I'll have to start. 

This recipe gets better the longer it sits in the fridge.  Although, it doesn't last that long around here.  One of my twins eats lemons .. just as they are...see his little fingers trying to fish a slice out.  I have to sweeten them in some way.  I may have to make this at night next time.  Get your lemons and fruit ready..we are making lemonade!   Enjoy!

Strawberry Cranberry Sauce

I don’t like cranberry sauce and not certain why.  I do like cranberries and strawberries.  Why not combine the two and make a sauce that not only I would eat, but also, my boys, I think, I hope.   I can't imagine where they get their pickiness from!  Surprised smile  
Don't just make this for Thanksgiving...make it all year.  I am even going to put this on a chocolate cake I am making tomorrow.  YUM!  Enjoy!  Love and hugs! 

Strawberry Cranberry Sauce

12 oz fresh cranberries, rinsed and picked through if needed
1 lb strawberries, fresh or frozen, rinsed and tops removed if fresh.  Half sliced and the rest quartered or halved
1/2 to 1 cup sugar, depending how sweet the strawberries are.
1/2 to 1 cup water
2 to 3 Tablespoons orange juice concentrate, optional

What to do

Put half of the strawberries, sliced, in a sauce pan with water and 1/2 cup sugar.   Cook until sugar is dissolved.  Add cranberries.  When cranberries start to pop, add rest of strawberries.  Cook until cranberries stop popping and strawberries are cooked yet still holding their shape.  Taste and adjust sweetness if needed cooking just until sugar dissolves.   Remove from heat and cool in refrigerator.  Enjoy!

Dark Chocolate Chip Strawberry Shortcakes

I'm still trying to revamp recipes to make them a little healthier than my norm.  Healthier this time was adding flax seed and cutting down on the sugar.   One of my twins was more than happy to help this morning when I told him we were making this for breakfast.  He sliced the strawberries, added the vanilla and little bit of sugar.

Strawberry Grapefruit Pie

A pie with two of my favorite fruit paired together to make a yummy dessert!  The boys want strawberry, I want grapefruit.  I made a pie to keep us all happy!  Enjoy!  <3 and hugs!

Strawberry Grapefruit Pie
I received an Honorable Mention on Recipe Riot for this pie <3

1 baked deep dish pie crust
2 lbs fresh strawberries, washed and sliced
1 large red grapefruit, peeled, membrane removed and cut in sections or pieces
1/2 cup Karo Syrup, light
3/4 cup plus 2 tablespoons granulated sugar
1/4 - 1/2 cup water
3 oz box strawberry jello
3 tablespoon cornstarch
pinch of salt and pepper
whipped cream and fruit if desired

Bake pie crust according to directions.  Wash and slice strawberries.  Place in a colander  to drain.  When dry, slice.  Put some aside for toppings.  Peel, remove membrane and cut grapefruit in sections or pieces.  Put on paper towels to remove liquid.  Save some for toppings.  Dice 1/4 cup each strawberries and grapefruit put aside.  Put a layer of sliced strawberries on the bottom of the pie shell.  Add grapefruit and sprinkle with 2 tablespoons sugar.  Add another layer of sliced strawberries.  Heat Karo Syrup, sugar,  salt and pepper, diced fruit, water *start with 1/4 cup* and cornstarch, cook until thickened, stirring continuously.  Remove from heat and add jello, stirring constantly until dissolved.  If too thick, add a little water.  Pour over fruit and place in refrigerator until set.  At least 2 hours or until firm.  Top with whipped cream and additional fruit if desired.
