Mini Apple Cinnamon Roll Pies

You are going to love these little pies!  I just know you are!   My hubby could have eaten all of them if I hadn't taken them away so my boys could have one, also.  You can make these in mini pie pans, use mini pie presses or cut and crimp.

Lime Pineapple Jello Salad

My precious Mama would always make this congealed salad, especially holidays.  We all loved it and now my family does, too.  The only difference?  I don't wait for special occasions to make and enjoy. 

I noticed this looked a little thin and commented about it to hubby.  He told it may be because he ate about half of it, still in the bowl, while I was getting the boys ready for bed!  ~smile~

Dark Chocolate Coca Cola Cake From A Cake Mix

Two ingredients, well three if you add chips, nuts or marshmallows, in this moist and wonderful dark chocolate cake!  The icing, you can make as much and as thick, as you wish.
I made a lot of icing to pour over the hot cake so it ended up as a rich, very moist and almost like a pudding cake.  Gooey and decadent.  Eat it warm or cold, my preference, out of the refrigerator.  But, do, keep it in the fridge.  Grab a fork and spoon and dig in!

Vanilla Cherry Pie Bars

I found out that cake and pie filling make a wonderful fast dessert!  Numerous recipes have been around for a gazillion years doing this.  Where have I been?  I'm just glad I finally decided to make this!  Get that box of cake mix out along with the can of pie filling and make these yummy pie bars.   I've added vanilla chips as an option.  They are good, however, there was too much vanilla for me.  If you love vanilla, then, by all means, add the chips!.  Here is your slice, right out of the oven.  ~smile~

We love citrus and frozen desserts.  This is the best of both worlds!  It's really easy to make without the aid of an ice cream machine.  It is a frozen burst of sunshine!

Honey Biscuit Cinnamon Rolls

These are easy to fix even for a school day morning.  I made them this morning for my boys and still have plenty of time to do what I always do.  You know,  the things that were supposed to be done last night that were not for some unknown reason.  Kind of like “the dog ate my homework” kind of thing.  Get up and get moving!  Made a special breakfast for you little ones and big ones alike.

Lemon Sour Cream Pound Cake

I made my Sour Cream Pound Cake lemony for Easter and it turned out wonderful, or so says my family.  ~smile~  I was going to use real lemons but didn't have enough to use in the cake and the glaze, and went with extract instead, which worked out great.  Next time I'll plan ahead and be certain to have more lemons on hand.  Happy Easter and many Blessing to you and yours.  I hope you enjoy the day, and this cake, with those dear to you.

Lego Gummies For My Twins Birthday

My boys are turning 6!  Where does the time go?  I have no idea.  It's bittersweet .. I miss the cuddles of newborn babes in my arms.  Giving thanks for the many blessing in my life, these two little miracles and their older brother.  I wonder what the precious little faces looking up at me will become...anxious to see my boys grow and revel in the strength they show in all aspects.  They are becoming wonderful young boys as I treasure each day and tuck away the precious memories of them year by year.

I wanted to make these two special boys something +LEGO  for their birthday celebration.

Cara Cara Orange Coffee Cake

If you have never tried Cara Cara Orange Coffee Cake, or any orange coffee cake for that matter, you need to!  It really is amazing!  Hubby thinks so, too.  I cut a piece to take a picture later, put it aside and went about cleaning the mess I made in the kitchen.  I am a messy one!  When the kitchen was clean,  I went to take the picture of my perfect little piece of Cara Cara Orange Coffee Cake and it was gone!  Geez, I thought after hubby ate three pieces, this piece would be safe.  No!  He ate it!  Hence, the photo below is not the perfect piece I wanted to take a picture of.  I had to take a picture in a hurry and hope for the best.  This is it in all its glory.  From now on, if I want to take a picture of something I'll snap away or I'll hide it!  Enjoy!

Cherry Cobbler

I finally bought cherries today.  YAY, Me!  I just love cherries but really don't like getting the pits out of them.  But...I do what I have to do and get stains on my fingers, my  clothes, well, just about anything that gets in my way.  That's just the way things work for me and I'm good with it.  One of the twins even has stains on his face and tummy but hey, if you're enjoying your food...show it!

We usually just sit down and eat all of them at one time.  Red everywhere...MMMM, that's good.  ~smile~  This time I was determined to make something out of them before they were gone and everyone, and thing, was red.  I decided to make a cobbler and so glad I did.  I cooked it in the toaster oven, and your times may very well vary from the time it took me.  It was at least 10 forevers getting it to brown, for goodness sake!  Oh, so, worth it though.  If anyone has a great way, or even a good way, to pit cherries PLEASE let me know.  I also need to know how to get the stain off my poor ole fingers, They will be bluish purple for quite awhile I suppose.  Are y'all ready to make cobbler?  It's a great one!  It's thin, so double it if you want a big ole bite of it!  By the way, you can use any fruit you wish and it will taste just as wonderful.  Here you go, Sweeties....


Cherry Cobbler

1/2 cup butter, or margarine
1/2 cup sugar, depending on how sweet your cherries are
2 cups, or more, halved fresh cherries, enough to at least cover the bottom of the pan
1 cup self rising flour
1 cup sugar
2/3 cup coconut milk, vanilla flavored, or regular milk
(I had left over coconut milk and it worked out great)


Preheat oven to 350 degrees F
In an 8x8 pan put butter, sugar and cherries  Heat until the butter and sugar is melted. 
*Throw it in the oven while it is preheating being careful the sugar doesn't burn.  Or, melt on a burner*
Stir flour and sugar together.
Mix in milk until smooth. 
Pour evenly over fruit.
Bake in preheat 350 degrees F oven for 40-50 minutes.  
Until the top is golden brown and a little, tiny bit hard on top.  
Eat it hot out of the oven or room temperature.  Top with vanilla ice while still warm.  MMMMMMMMMMMMMMMM, that is so Good!

Dark Chocolate Cake

As always in our house, nobody can agree on what kind dessert, or anything for that matter, they want.  I did as I usually do and combine different ingredients of their requested food.  It tends to make a happy dessert for everyone.  I saw a recipe on the back of Hershey's Dark Cocoa..here is their recipe for Deep Dark Cake.  I adapted this recipe from theirs.  This cake is very moist and really does not need anything to top it.   The icing is great though.  We added it to cut pieces, each person topping their own.  I did find that this cake wasn't as thick as I wanted it so I made another cake that is reduced fat.  It turned out a little thicker.  I'll be sharing that one very soon.   I am making another one tonight cake tonight in an 8x8" pan and will let you know how it turns out.  <3 and hugs!

Fudge Pie

I ran across this old recipe the other day and knew my boys would love it.  Of course, I changed it a bit here and there, you know I do.  My hubby always asks me why..I usually don't have an answer that's just how I am.   For this pie, I changed it by cutting down on the sugar and margarine.  There was too much for me.  You can even start with 1 cup sugar to see if that is sweet enough as this is a sweet pie.  It tastes, and sets up like, fudge.  Enjoy!

Candy Cake Bites

Candy Cake Bites

I wanted to make something special for the twins classes for Valentine's Day and decided to make these cute little candy cake bites!  They are easy to make and fun to eat!  Just the perfect size for little hands.  <3

You'll need a cake cooked, cooled and crumbled.  I used the rainbow cup cakes and mini cakes I made the boys.  You can also use prepackaged snack cakes, the ones with filling inside.  I did red velvet balls the other day that way.  
If you have leftover cake and don't want to finish eating it, make cake balls out of it, put in a freezer bag and pop in the freezer!  <3
frosting, can, homemade or in a spray can
mini muffin pan
liners, the white ones to throw away and decorative ones to put the finished candy cake bite in. 
almond bark
candy melts or chocolate chips
wax paper

I'm showing blue cake below but I thought this was pretty.  It naturally went into a heart shape.  <3

This was a cupcake, I just added a little icing.  I had the kind in a squirt can and just squirted a little in.  If you are using a whole cake, start with 1/2 can frosting and add more, if needed, to get the cake crumbles to stick together.

 You want the crumbles to come together to form a ball.  Place on waxed paper as you make them. 

 Melt almond bark.  Put mini wrappers, you'll throw these away, in a mini muffin pan.
Immediately top with the bake balls you just made.
Place in freezer until set.
 While they are in the freezer, melt your top coating of candy and have your toppings ready.  Might as well call the kids, you know how they love to decorate!!  I used Wilton's candy melts.  You can use another color of almond bark, if you wish.

Remove from freezer and unwrap.  Let it sit for just a couple of minutes.  

 Grab the bottom and dip the cake ball in the melted candy to just cover the top of the bottom piece of candy.  

 Immediately decorate. <3

Turtles...The Easy Way

YUM!!!  The boys and I have so much fun especially during the holidays!  Making and baking are one of our favorite things to do.  This is such a simple, yet delicious and fun treat!  (sorry about the photos..I can't crop them for some reason)



Turtles..The Easy Way

Square pretzels
Rolos 
Pecans or whatever nuts you have available.  Whole, half or pieces..it doesn't matter!

Place pretzels on a cookie sheet
Top with rolos
Heat in a preheated 350 degree oven for 2-4 minutes.
Take out of oven as soon as candy can be pushed down.  Check after one minute and then keep a close tab on them.
As always, my oven cooks different than yours..adjust times accordingly!




Notice the rounded cheeks...They ate most of the rolos!  <3 and hUGs!

Cast Iron Skillet Bottomless Apple Pie

My hubby, Ted, has been after me to make him a dessert that isn't hand held and doesn't contain chocolate.  I got up this morning and decided it was time to make one just for him.

I saw a recipe for an apple pie that Sandra Lee made and I adapted mine from hers.  Well, Honey, Here is your dessert!  You see that slice missing (much more gone now) ...You know who ate it, don't you?  Yep.....<3 and hUgs!

Triple Chocolate Bundt Cake

For My Boys!  After their first week of being Outstanding at school!  They deserve nothing less than a Triple Chocolate Bundt Cake!  


I am so very proud of all three of them.  My oldest and young ones have adjusted with such ease.  Especially the twins.   They have never been away from me and did wonderfully this week!  They are in separate classes and Love It!  They tell each other about the new friends they have made.  They talk about the  projects they haved worked on.  They have so much fun discussing what they did.....I am glad the school decided to separate them.  Frankly, I was thinking about keeping them together.  

My oldest learned a new game in spelling.  Reunited with old friends and made new ones.  He seems to be at ease in the class assignments...thus far. :D

Yes...They so deserve this cake.  I just cut it a bit ago and they have eaten a third of it already!  Makes Mama smile!  :D :D :D  <3 <3<3 and Hugs!
