Sweet Potato Puffs

Oh, do I have a favorite holiday sweet potato dish for you!  Dessert or side, you decide.  It's an old one but a great one!  Cook as many sweet potatoes as you wish.  Sweeten to your taste with either brown or regular sugar.  Add vanilla, cinnamon, nutmeg, ginger, nuts....whatever you want to make it your own.  There really isn't a set amount of anything.   It's your old sweet potato casserole rolled up in a ball with the marshmallows hiding inside!!!

Spinach Squares

I love spinach but it wasn't until recently that I decided I did.  I despised it as a child and would refuse to eat it, turning up my nose and closing my lips tightly.  Now, I eat it weekly baked or raw, I want it!   One of my twins eats it raw..he loves salads!  The other two boys, well I'm working on them.  Trying new ways.  They'll come around..in time.

My oldest has been wanting me to make a pot pie lately.  Of course, I had to oblige.  This was so easy to make .... I don't know why I haven't done so before.  Use any leftover meat and vegetable combinations to make this comfort food.  Enjoy!

Ratatouille

Such an easy meal to prepare.  Serve it with jasmine rice,  over Egg Noodles or with One Hour French Bread.  Any way you plate it, it is bound to be a hit!

Roasted Rosemary Turnip Roots

When I was younger, you couldn't get me to eat turnips for nothing!  Nope, nothing!  No way, no how!  Fast forward a gazillion years...I love them!  I cook them with ham seasoning but my very favorite way to eat them is roasted.  Oh. My. These are so good!  I could grab and eat them right out of the oven.  Yes, I love them that much now.   So much so, I cooked them twice, in two days, in my Lodge  15" Seasoned Steel Skillet.  This is perfect to roast vegetables in!  I roasted 1 pound and could easily fit another pound in.  The larger ones were quartered, the smaller halved.  Simply seasoned yet robust in flavor.  Try them...I know you will love them also.  Oh,  just in case you hadn't heard.....I am very honored to be hosting a giveaway sponsored by Lodge Manufacturing.  It's for their amazing 15" Seasoned Steel Skillet.  I have cooked in it every day and l just love the ease of cooking from stove top to oven to grill.  It is large enough to accommodate food for my growing boys and much more.  Perfect!  The giveaway will start sometime in the next two weeks.  Stay connected with me so you won't miss out on this fantastic skillet.

Lemon Thyme Parmesan Egg"plant" Noodles

If you like egg noodles, you will love this recipe!  It reminds me of soft egg noodles that have been cooked and have been sitting in a pot.   Like at a family reunion, on the stove, just waiting for you but you have to catch up on the latest from relatives you haven't seen in many years.   The soft flavorful noodles are beckoning you and you so want to go over and get a big spoonful, because you can...you're at a family reunion. and you can eat anything you want...today.  Now, you can get the same comfort from these lovely, soft Lemon Thyme Parmesan Eggplant Noodles.  OH, you know what?  These would be wonderful minus the lemon juice and chicken broth added to flavor them.  Leave me a comment.... Smashed Potatoes

Oh, these are so good!  You really don't need a recipe.  Boil, Smash, Bake, Eat!  Use your favorite toppings and there ya go!  Enjoy!






Smashed Potatoes

small potatoes 
olive oil
salt, optional
pepper, optional
ground garlic, optional
sour cream, optional 
chives, optional
parsley, optional
parmesan cheese, optional
cheddar cheese, optional 



Preheat oven to 350 degrees F.  Grease baking sheet(s).  Scrub potatoes and boil until fork tender.  Smash with something heavy.  My yukon gold potatoes were on the big size so I cut them in thick slices and then smashed!  It's fun to work out the frustrations of the day.  ~wink~  Place on a greased baking sheet.  Drizzle or spray with olive oil.  Sprinkle with your favorite seasonings, I used salt, pepper and garlic.  Bake for 15 to 20 minutes until they start to lightly brown.   You can top with cheese the last few minutes.  Top with your favorite toppings and Enjoy!

Roasted Asparagus Soup

This soup was so delicious and easy to make.  I roasted two bundles of asparagus we ate one...okay a little more than one, and I made soup with the rest.  This was enough for hubby and I.  You will definitely want to  make more.  Love and HugS!

Broccoli Bake

I do cook real food...see!  It's just that we are in a rut and eat the same things over and over again, it seems.  Until I saw what my lovely friend Ann, of The Fountain Avenue Kitchen shared with us last week.  Her Broccoli and Prosciutto Bake looked too good not to make!  It is an easy dish that I just knew would be a hit, and it was!  I adapted it to use what I had on hand, you do that too, don't you?  Yeah, I thought so. Anywho,  this is really easy, versatile and YUMMY!  It is made with frozen broccoli, my oldest son's favorite veggie, crescent rolls *another favorite*, and whatever you want to add.  I am going to add fresh mushrooms and whatever leftover meat I have next time.   It's wonderful to eat with a fork or cut into small pieces for an appetizer, my son was eating it pizza style.  However, you make and eat it, I know it will be a favorite in your family, also.



Broccoli Bake 

1 tube original crescent rolls 
5 to 6 cups frozen broccoli florets, measured frozen, thawed and squeezed dry with towel 
  you can substitute other veggies and/or meat for part of the broccoli
1 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
2 eggs
1/2 cup milk, 
1.4 to 1/2 teaspoon garlic powder, or to taste
1/4 teaspoon white pepper. or to taste
1/4 to 1/2 teaspoon dried thyme, or to taste
drizzle of lemon juice, optional


Heat oven to 375 degrees F.  Beat eggs and milk together, set aside. Unroll crescent rolls and place in the bottom of an ungreased 8x11 or 9x13 pan.  Put half the shredded cheese over the bottom. Layer optional meat and/or veggies, then broccoli.  Pour milk and egg mixture over top.  Drizzle with lemon juice, if using and sprinkle with  seasonings,  Top with rest of cheese.  Bake in preheated oven for 30-40 minutes until set and golden brown.  Enjoy  

I cooked this in a Le Creuset baking pan I bought over 20+ years ago.  I love it!

Fried Potatoes, Green Peppers and Onions


 It's National Potato Day Y'all!


We love potatoes!  Actually my boys like more of the french fry version but hubby and I love just about any way you can fix them.  This is a favorite.  I can see my sweet Mama cooking this many, many years ago.  ~smile~   
What's your favorite potato dish?  I continue to fix them different ways with hopes of them finally liking them as we do.  

I just love the smell of onions and green peppers cooking away!  Throw in some potatoes slices and I can make a meal of this dish.  My precious Mama would brown hamburger meat first then add the potatoes, onions and peppers.  Sometimes I add mushrooms, also.  
Grounded beef or turkey can also be added.
Served with a hunk of bread and this is comfort food to me.  


Fried Potatoes, Green Peppers and Onions

4 to 6 medium potatoes, however many you need
1 small to medium onion
1 small green pepper
sea salt, to taste

freshly ground pepper, to taste

coarse ground garlic with parsley, to taste



Cut potatoes into slices, place in bowl and covered with water with a teaspoon of salt.  Refrigerate. Keeps them fresh and they don't turn. 

  Spray skillet and heat to medium/medium high. Add potatoes and sprinkle with salt, pepper and garlic.  Add onions and peppers...season again.  
Cook until a little brown on the bottom and flip.  Cook until all vegetables are tender and brown.

Roasted Frozen Broccoli


My oldest told me he loved broccoli.  I was actually being to doubt that this is true.  It seemed every way I made it wasn’t the way he liked it.  I cooked it in soup, casseroles and covered in cheese to no avail.  Last night I decided to roast it in the toaster oven. Jackpot! He loved it!  I put the frozen broccoli flowerettes in the toaster oven with only a spray of olive oil and kosher salt. There is so much that can be done with this.  When it comes out of the oven add a splash of lemon juice and fresh ground pepper. Sprinkle it with grated parmesan and/or cheddar.  Cut it up and add to cooked rice.  The possibilities are endless.  Very easy and quite good just as it is.  <3 and hugs!


Roasted Frozen Broccoli

frozen broccoli, no need to thaw
olive oil spray
kosher salt
spray margarine

Spray pan with spray.  

Add frozen broccoli and spray with olive oil  Cook for 20 minutes at 400...preheat if you have time. Turn pan around at 10 minutes.  Cook another 5 minutes and check to see if done.  Cooked but still a little firm..the way we like it.   Give another spray with olive oil or spray margarine and season with kosher salt to taste.  Add additional seasonings, lemon juice, cheeses....if desired.  Enjoy!  <3 and hugs!

Alfredo Green Bean Casserole

A spin on my Mama's, and probably yours too, green bean casserole.  The one with mushroom soup, french style green beans and fried onions.  I loved my Mama's green bean casserole and looked forward to eating it.  However, my boys like alfredo better, so....I made it with alfredo sauce and it was  HIT!    Try it for something different.  I bet your family will like it too.  <3 and hugs!

Buttermilk Corn Cornbread

Moist buttermilk cornbread with sweet kernels of corn nestled inside.  MMMM....Pass the butter, please!  Hubby was brought up with sugar cooked in his cornbread.  Being from the South, I was not.  Do you or don't you, add sugar to your cornbread?
