Pear Caramel Pecan Sauce

This is perfect spooned over homemade bread, Sour Cream Pound Cake or ice cream!  




Pear Caramel Pecan Sauce

1 1/4 cups sugar
1/3 cup pear juice, plus 2 Tablespoons 
2 Tablespoons unsalted butter
2 Tablespoons heavy cream
1/2 to 3/4 cup pecans, chopped  or halved
1/2 cup diced pears, optional
pinch sea salt

In a heavy sauce pan, heat 2 Tablespoons pear juice and sugar.  Bring to a boil and let cook until golden brown.  I stirred occasionally with the end of a butter knife but I think, technically, you are supposed to leave it alone or swirl it in the pan.  Take from heat when golden brown.  Add butter, pour pear juice down the side of the pan.  It will sizzle!  Whisk the heavy cream in.  Stir in the sea salt, pecans and pears, if using.  It will thicken a little as it stands.  If it is too thin, add a little sugar to it and heat to a boil.  Watch out...it will easily boil over!  There ya go!  It was easy and my first time making this.  Hope you like it! Caramel Apple Bran Muffins

Aw, Fall.  I love the crisp air.  Freshly picked apples and pumpkins, gathered nuts for cooking and snacking on.  Love it!  I find myself baking a lot more than usual.  Can you imagine that?  I couldn't possible bake more than last month but yeah, I have!  I love it!

My boys have eaten more muffins in the last 3 weeks than they have ever eaten before!   The Pumpkin Muffins are being made at least twice a week at our house.  I think we are getting a little burnt out on them.  There are just so many days/weeks I can eat Pumpkin Muffins.  ~smile~  I decided to make a new muffin recipe and this one is a hit!  Please note, my muffins rose in the oven then went down again.  I don't know if this is because I let them sit too long or if bran muffins don't rise well.  If you know, please leave me a comment. Let me know how yours turn out.   Heck, I'd love for you to leave me a comment anyway.  ~smile~  Now...what shall I make next?   NOTE!!!!!  I have edited the recipe since they did not rise well.  Beautiful Ann of The Fountain Avenue Kitchen and Lovely Nisreen of  My Foodie Universe were nice enough to help me.  I increased the baking soda and added baking powder.  Thank you my  gorgeous friends!

Caramel Apple Bran Muffins


What you need


1 cup bran cereal
1 cup buttermilk
1 cup King Arthur unbleached all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3/4 cups brown sugar, packed Make your own
2 Tablespoons molasses, unsulphured
3 Tablespoons oil
1 egg beaten
1 cup shredded or diced apples, 1 medium or 2 depending on size.
1/2 to 1 cup caramel bits

What to do

Preheat oven to 400 degrees F
Put paper liners in muffin pans
Pour buttermilk over bran cereal and let sit
Whisk egg, brown sugar, molasses and oil.
Sift flour, baking soda, salt and cinnamon together.
Add to egg mixture, stir in.
Stir in cereal.
Fold in apples and caramel bits.
Fill paper liners 3/4 way full.
Bake in preheated oven for 12 minutes.
Turn pan(s) around and cook another 3-5 minutes until toothpick comes out clean.
Let sit in pan 1 minute, then take out to cool on rack.
Enjoy!

My Birthday Cake

Today I am 49 years old.  Not too young but not too old either.  Just a Happy Medium for me!  I had a Beautiful Day.  I received Soooo Many Beautiful Birthday wishes from Lovely Friends and Family!  My boys let me sleep just a tad longer than normal.  Made their own breakfast of...this is not normal by any means, Oreos and milk.  I know...I know....

Then they went to Walmart, our favorite store where everyone knows us by name!  Yep, that bad.  Go there that often that they are like neighbors and I have a friend from there on my facebook.  ;D They each bought a little toy to celebrate.  <3

My oldest told me this morning...Mom, I know you love to bake and I know you are going to make a cake today.  ;D  So that is what I did...Made us a birthday cake.

Please note....I used a sparkler for this shot.  We did not eat this piece of cake.  
I have seen sparkler candles at Walmart and Party City. <3 and HUgs!

I used my Triple Chocolate Cake and added 1 cup each of chopped walnuts and caramel bits to the batter.  I baked this in a springform pan.


I melted the remainder of the caramel bits and a teaspoon or so of water,  then added a handful of chopped walnuts to it.  You can top the cake, but we really don't like icing and toppings on our cakes...Okay, It's me that doesn't.  So I make something for All the boys, little ones and hubby and add to theirs.  Hope you like My Birthday Cake! <3 and Hugs!

Caramel Peanut Apple Dark Chocolate Upside Down Cake

What is better than Triple Chocolate Cake with Salted Roasted Peanuts, Fresh Apples and Caramel?  Not much!  This is sooo good right out of the oven and…even better after being in the refrigerator a day or two.  Oh Wow, this is great!  Go ahead and treat your family to a new favorite! 


I used my Triple Chocolate Cake using a cup of chocolate chips instead of the whole bag.  Used not quite a full bag of pudding because that is what I had left over from another recipe.  I baked it in a 10 inch springform pan instead of a bundt but it will be Beautiful in one with the caramel flowing down the sides…..  <3

Over Load!!!!!

Tell me what you think about this!  My eldest thinks it Rocks!  <3 and Hugs!
NOTE....We play with our food and this is not a normal, everyday item on our foodie schedule!  <3

I have seen chocolate covered bacon and always wondered about it.  I was cooking bacon and a ham.  I also bought Rolos and pretzels to make candy.  Somehow I forgot to buy nuts to add to them.


My thinking as I was cooking the bacon was...crunchy and salty.  Nuts.  I made a candy like that.  Son liked that.  Then,  I thought texture and salty..ham.  Son liked that also.  Combine the two for an Absolute Over Load!  Pretzels, Chocolate, Caramel, Ham and Bacon!  Yeah, I know, gross!  But, Hey!  Don't knock it until you try it.  Also doing chocolate covered ham slices....Yep!  Heard it hear first!  <3 and Hugs!


Tuesday Morning.......My son asked me if he could take this as a snack to school today.  He Loves It!  <3 and Hugs!
