Mexican Jiffy Mix Casserole
It's Saturday, overcast, cool. I want chili! Instead, I made this easy casserole and it turned out to be the perfect fix. Spicy and sweet...yeah, I'm lovin' it!

Broccoli Corn and Cheese Jiffy Mix Casserole
I have seen casseroles made with Jiffy Mix for some time now. Heck, forever! I finally made one with the popular mix and Oh, My, Goodness! I love it. Hubby loves it! They (don’t like broccoli) My oldest son loves it! Easy to make with whatever you have on hand. Mix and bake, yep, I love that, too!

Buttermilk Corn Cornbread
Moist buttermilk cornbread with sweet kernels of corn nestled inside. MMMM....Pass the butter, please! Hubby was brought up with sugar cooked in his cornbread. Being from the South, I was not. Do you or don't you, add sugar to your cornbread?

Creamed Corn and Bacon
First you need to get little helpers to shuck and silk the corn for you. You then can use a creamer to make creamed corn or cut the kernels off, put in blender with a little water to make creamed corn.
Fry 6 pieces of bacon...saving the drippings. Let your children crumble the bacon once it is cool. If your children are like mine, you might as well cook the whole package. They like to eat the bacon while making crumbles. ~smiles~
Once the corn is creamed, add water if it is too thick, put in a microwave safe dish. Add 1/4 to 1/2 teaspoon salt and pepper. Add 1 to 2 teaspoons of bacon drippings. Cook for 3 minutes in microwave. (can be cooked on stove) If it is still too thick add more water...too thin, cook longer. Keep cooking at 2-3 intervals keeping an eye on it. It is done when the starchy taste is gone. Add chopped bacon and watch it disappear!~

Mixed Up Corn
I decided to try something different with corn while I was putting it up this morning. A little of this and lot of that..... :D
Mixed Up Corn
4 ears fresh corn
1/4 cup red bell pepper, small chop
1 clove garlic, minced
salt and pepper
2-3 slices bacon, cooked and crumbled
Cut corn off of cob in whole kernels. Mince garlic clove. Chop pepper to size of corn. Put all, except bacon, in pan. Season with salt and pepper. Cook until done...approximately 10 minutes.
Top with crumbled bacon.
Enjoy!
