My Boys like to fold fresh peaches up in them and eat while holding in their hands. That's more or less the way we like it. Simple yet delicious! Another simple way is whipped topping, simple syrup and fresh peach slices. Nothing fancy about us but they did taste the part.
Ginger Snap Peachy Pan Cakes
1/4 cup (4-6) ground Ginger Snap Cookies, We used 4 and there was just a hint of ginger snaps
2 cups plain flour
3 tsp baking powder
1 tsp salt
1 1/2 cups pureed fresh peaches
1 1/2 cups fresh peaches, diced
1/4 tsp cinnamon
1/4 cup oil
1 egg
1/4 cup milk
Mix dry ingredients together. Add milk, egg, pureed peaches and oil. Mix well. Add diced peaches.
Spray skillet with oil. Cook over medium low heat. It is ready to flip when holes appear in the top. Cook another 2-3 minutes, until brown and done throughout.
Peach Topping
1/3 cup water
2/3 cup sugar
Peaches, sliced
Bring water to boil. Add sugar and stir until dissolved. Add peaches and toss. Let set for a few minutes. Top Gingers Snap Peachy Pan Cakes with a whipped cream and drizzle on top. Add peaches. YUM!
Serve with fresh peaches and whipped cream, hot maple syrup or vanilla bean ice cream. Frozen peaches are also good with them. My Boys like to fold them over and stuff with peaches, eating them with their hands. We hope you like them!
