Mini Lemon Pies

This recipe is super simple and you have probably made it before a time or two. For the filling I just mixed 1 14 oz can of sweetened condensed milk with 1/2 cup lemon juice. I didn't have any lemons on hand. Isn't that terrible...living in FL? ;( Put that in the fridge to set a bit.  Instead of a baked pie crust, try graham cracker crust and freeze the pie(s).  Oh, My, Gosh!  That is so Good!  I LOVE frozen Lemon Anything!!!!

Hubby bought ready made pie crust...well, actually he bought the ones in the pie pan.   I thawed it, floured the counter a little and rolled the pie crust out. I used a Wilton Valentine pan to cook the pie crust in. You can use a muffin tin and they will be super Cute!!! Cut the pie crust out a little larger than the top of the hole. Spray the pan so the crust won't stick. Fit cut pie crust in and bake for 6 minutes., depending on size, check and cook additional time, 1-2 mintues at the time, until light brown. Take out of pan and cool on a rack. My oven is older and is finicky. I always say to cook according to your oven, not mine. ;D  Add filling to pie crust. and a dollop of whipped cream or cool whip.

Mini Chocolate Pie Cups ..... Low Fat

My oldest, Lucas, and I are trying to make up for the Baked Breaded Bacon, I made the other day.  ~smile~ For dessert I made mini chocolate pies in wonton baskets.  Sugar free pudding mix made with fat free milk and non fat whipped topping topped with mini semi sweet chocolate chips.  MMMMM!  The shell was nice and crispy, together with the creaminess of the pudding and topping and little hard bites of the chips...made for a satisfying dessert.  Make it your own by using berries and whipped topping, vanilla pudding and sliced, or diced bananas...you get the idea.  Place it in the mini cups and they will be cute as a button!  Hope you like them, too!  <3 and HUgs!


Mini Chocolate Pie Cups....Low Fat

wonton skins
3 oz fat free pudding mix, any flavor
1 1/2 cups fat free milk
non fat whipped topping...the kind in the container, or make your own

You'll need a mini muffin pan.

Make pudding and set in refrigerator.  Make this 30 minutes or more, before you make the pies.  Putting in the freezer for a few minutes if needed.  

Preheat oven to 350 degrees

Place wonton skins in muffin pan
Bake for 5-10 minutes, until set 
As always, my oven is different than yours. Please adjust time accordingly
Allow to cool.  Make these while your pudding is setting or even the morning of or night before.  Store in an airtight container or bag.  Be careful and do not crush them.

Allow children to make their own.  Place everything out in assembly line fashion and let them have at it.  Mini M n M's, chopped nuts,  sliced bananas,  strawberries or any berries,  little scoops of ice cream.... You get the idea.  
The boys had fun making theirs.

Our Christmas and Mini Chocolate Pies!

We had a Beautiful and Blessed Christmas this year.  We shared the meaning of Christmas, as well as Santa.  The boys had an abundance of wealth...toys as well as meaning.

The boys youngest sister, which is older than they are...and me for that matter, ~smile~ ,  spent the afternoon with us on Saturday!  It was so much fun for them, and us!!!!  Opening their presents and playing with them was all they could have ever hoped for. 

Christmas morn was especially good for the boys, which I am thankful for.   (I was awake for almost two days and very tired)  We are Blessed to be able to share with them about the day, and also gifts thrown in from us that Santa overlooked getting. 

The afternoon was filled with fun from the boy's oldest sister and brother in law...yep, my boys have 50+ year old sister(s) and 59 year old Son-IL.  ~smiles~  What a fun time for all! 

Continued fun today, when they were able to spend gift cards they received from their Aunt Di Di.  My sister that will not speak to me but will send gift cards to my boys. The boys bought great gifts with them and are still playing with them.  I am thinking gift cards next year, with shopping December 26, is the way to go!!!!! 

We have shared with our boys the gift of giving to those that may not have a great Holiday.  That may not have presents.  That may not have a supper, or food whenever hungry, to eat. 

We had a Beautiful Christmas and hope you did also.  It's all about Love, Family, Sharing and Giving from the Heart and not the Wallet.  Showing the Love that Blossoms from deep within and grows as it is shared in the smallest of ways, to become a Bouquet of Beauty!

Mini Chocolate Pies

6"  flour tortillas
chocolate pudding made as directed on box for pie
whipped cream made as directed or cool whip
bananas, strawberries, chocolate chips....or other ingredients ....optional

Heat oven to 350 degrees

Fit tortillas in pan, or can...Using a large tuna fish or chicken can.  Heat until formed when taken from pan/can without being too flimsy.  
Cool shell. Do not over cook!
Add chocolate pudding.

Add banana slices, or other yummies, here if desired. 

Top with whipped cream or cool whip.

Mini Bacon and Cheese Fritattas

A great way to eat breakfast or a snack.   Eggs, cheese, bacon, roasted red peppers and black olives!  Anything you have  in your 'frigerator can go in a fritatta!   Put in the oven while the children are getting ready for school.  Easy breakfast that can be eaten with little hands.     

Mini Bacon and Cheese Fritattas
makes 8 in regular muffin size pan

4 eggs, beaten
1/4 to 1/2 cup of grated cheese
4 slices cooked bacon, crumbled
1/8 cup of roasted red peppers, fresh peppers are great too, diced
1/8 cup black olives, diced

Preheat oven to 350 degrees
Spray muffin pan

Mix all together and cook for 15-20 minutes.  I always check about 3-5 minutes earlier than the least amount of time.  Eveyone's oven is different.  I know mine is!  :D

The Twins are fussy eaters...I just do the Egg, Cheese and Bacon for them.  Beat the eggs and fill the muffin pan.  Add your ingredients on the top and softly push them down.  Each child can make their own. :D

Mini Egg Custard Pies With Peaches

This is a recipe I got from our dear friend Shirley for the boys.  She lived up the road from us for a very long time.  At least until a few years ago when she and her husband, Buddy,  moved back to their home town.  I really miss our dear friends and seeing them daily....sharing everything by just going a short walk to their house.   I miss eating together and just enjoying each others company.  Thankfully, through facebook and emails we get to catch up with each others lives and chat.  It just isn't the same as sharing Sweet Tea and looking into your friends face.  Love and Miss you both Shirley and Buddy!  ~hugs~

I made Mini Egg Custard Pies with Peaches, this recipe made 18.  Below is Shirley's recipe for her Egg Custard Pie.  

Egg Custard Pie(s)

4 Eggs
1 can Evaporated Milk 
1 can of Water using evaporated milk can to measure
1 tsp Vanilla
3/4 Cups of Sugar
2 Tbs of Flour (any kind will do)
Sprinkling of Nutmeg
2 premade pie crust
fresh peaches diced very small, optional
3 1/2" cutter,  I used the rim of a glass

Heat oven to 350 degrees


Lightly grease muffin tins.

Mix first 6 ingridents.
Cut pie crust with your cutter.  Put into muffin tins.
Fill each with custard mixture and a few pieces of peaches. 
Top with a pinch of nutmeg.
Bake 15 minutes and check to see if it is set.  Firm to the touch.  I ended up cooking mine 25 mintues.
(I always start checking too early.  But I would rather do that than over cook.  :D)
Let sit until cool.
You can also cook in pie crusts,  put on cookie sheets,  for 45 minutes checking after 30 minutes.
