Pancake Sausage Muffins

I wanted to make something a little different this morning.  Here it is.  ~hugs~

Pancake Sausage Muffins

2 cup plain flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4cup brown sugar
5-7 small sausage links
1 1/4-1 1/2 cups milk or buttermilk
2 eggs, beaten
1/2 teaspoon maple extract

Preheat over 350 degrees.

Stir dry ingredients together. 
Cut sausage into small pieces and toss in flour mixture. 
Add eggs,milk, and maple extract, mix well.  


Fill greased muffin pan 2/3 full.  Makes 14 regular size muffins.

Bake for 12-15 minutes.  As always I start checking about 2 minutes before the least amount of time. 

Top with warm Maple Syrup.  Little ones can dip pieces in a small bowl of syrup.  Enjoy! 

*note... Next time I will add Maple Extract in the batter.  Yummy!  No need for syrup then.  ~smiles thinking of less mess~
