Cinnamon Breakfast Rolls

I took Rhodes Dinner Rolls out to thaw for supper, put them in the refrigerator and somehow forgot to cook them.  Yes, I know….it doesn’t seem possible to forget something as delicious as yeast rolls.  But, I did! 
We had Chicken and Dumplings.  We ate way too much food.  Piled up on the couches and we all went to sleep.  All except my oldest, he went to bed after school because of a headache…darn allergies!  He woke me up at 8:30…hungry and thinking it was time to get ready for school.  After making him a sandwich, convincing him it was a long time until morning, getting the little ones ready for and put in bed, waking my husband and sending him to bed, getting myself ready for bed…I then sat on the couch again.  Yep, went back to sleep.

Parmesan Garlic Pull Apart Bread

We had fun making this!  Line the children up and start making these YUMMY Parmesan Garlic Pulls, that's what My Boys call them.  They were so happy with the outcome of these and between the 5 of us...well, there wasn't any left.  ;D  Delicious as a snack or to complement a meal.  Make some today with your little ones and see smiles upon smiles.  ;D  <3 and Hugs!

Caramel Peanut Apple Dark Chocolate Upside Down Cake

What is better than Triple Chocolate Cake with Salted Roasted Peanuts, Fresh Apples and Caramel?  Not much!  This is sooo good right out of the oven and…even better after being in the refrigerator a day or two.  Oh Wow, this is great!  Go ahead and treat your family to a new favorite! 

I used my Triple Chocolate Cake using a cup of chocolate chips instead of the whole bag.  Used not quite a full bag of pudding because that is what I had left over from another recipe.  I baked it in a 10 inch springform pan instead of a bundt but it will be Beautiful in one with the caramel flowing down the sides…..  <3

Chicken and Cornbread Dressing

Nothing says comfort more than food that is from a family recipe.  Love, Love the way it feels deep inside as we make and eat old time favorites.  This was always "fixed" at Holidays and gatherings whether it is for a celebration or mourning.  Everyone makes it a little different.  Mine is a little different than my Precious Mama’s and Hers different than her Sweet Mama’s.  I’ll share my recipe today with the heartfelt comfort of Memories of Beautiful times gone by.  Make this and share with your family if you don’t already.  A Big Ole Pan a “Dressin’”  just makes everyone smile as they eat way too much of this Southern Favorite.  Enjoy <3 and Hugs!

Honey Garlic Mustard Pork Chops

Pork Chops are a stable in our house.  Seems like we are forever eating pork and chicken.  That being the case...We are always looking for new, delicious ways to cook them.  I mixed this yesterday and "it was very tasty" my boys like to say.  ;D   I'll be using this on chicken breast also.  This only made enough to smear on the top.  Double, or triple, to suit your needs.  

Honey Garlic Mustard Pork Chops

6 Pork Chops...boneless, thin cut
2 teaspoons honey
1/2 - 1 teaspoon soy sauce
1- 2 teaspoon minced garlic
2 teaspoons honey mustard
salt and pepper to taste

Mix honey, soy sauce, garlic and mustard together.  
Spoon over pork chops.  
Sprinkle salt and pepper on chops, if desired.  
Cook at 350 degrees for 10-12 minutes until done...internal temperature of 145 degrees.  Do not over cook!  Let sit for a few minutes before serving.

Pepperoni Cheese Pull Apart Bread

Do you want something fun and delicious to snack on?  Bread, pepperoni, cheese and a hint of garlic perhaps?  Well, here it is!  Just for you!!!
It was rainy Sunday morning and after baking a loaf Whole Wheat Banana Bread,  I took out a loaf of frozen bread.  Not having anything particular in mind…I kept thinking about the possibilities there were given with a loaf of unbaked dough.   Looking in the refrigerator made it easy to decide…a half a stick of pepperoni and low fat cheddar cheese.  Pepperoni Cheese Pulls (as my oldest calls them) .. oh, yeah!

Whole Wheat Banana Bread

We awoke to thunder and heavy rain with darkness all around us.  A cozy Sunday morning with hubby and the boys.  Somehow, this dreary to some....lovely to me,  morning gave way to rumbling tummies.  Non-stop cries of "I'm Hungry!"   I look around and see those bananas that nobody wants..that have sat on the counter a day too long.  While they look bad on the outside...the inside is full of Deliciousness just waiting to be created and eaten!  Here is what became of those bananas on dark, rainy Sunday morning in Florida.  

Whole Wheat Banana Bread


3 ripe bananas, smashed or pureed
2 large eggs
1 1/4-1 1/2 cup Buttermilk
1 stick of margarine/butter
2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cup whole wheat flour
1 1/2 cup all purpose flour
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1/4-1/2 teaspoon ground cinnamon

loaf pan, greased

Preheat oven to 325 degrees


Cream butter/margarine and sugars.  
Beat in the eggs.  
Add pureed, or smashed, bananas 
Add vanilla.
Mix flours, baking soda, salt and cinnamon.
I didn't have buttermilk so, I added 2 tablespoons lemon juice, or use vinegar, to 1 1/2 cups whole milk.  Stir and let sit for 5 minutes or until it starts to curdle 
Using a spatula, alternate the flour and milk.  Ending with milk.  You may not have to use all.  I used 1 1/4 cup today.
Put in grease loaf pan and bake at 325 degrees for 40-50 minutes.
I turn the pan around at 20 minutes.  Then checked again in another 30 minutes.  Mine cooked for 45 minutes.
Done when toothpick comes out clean. 
Very Dense and Oh So Good!
As always, my oven cooks different from yours so adjust times accordingly.

My Precious Great Aunt Louise’s Rice Pudding <3 and my Fruity Rice Pudding

My parents and Grandparents have all passed away.  I don’t talk with my sisters…..often.  I have cousins I chat with through email and facebook.  I moved away from home at the age of 20 and with it I left behind the opportunity to gather the Treasured Recipes of My Family.  I have asked others to share theirs with me.  Through this I have reconnected with my very Sweet Cousin, Linda.  She is so special to me and is always there when I need her.  She graciously shared a few Treasured Recipes with me of our family.  (Thank you so much Linda…Love You!) This Rice Pudding Recipe was her Precious Mama’s.  I know you will enjoy it! 

My Great Aunt Louise.  I remember when I was very young…She lived nearby.  We didn’t have any other family that lived in the state, it was such a Blessing to share time with her and have family closeby.   When My Precious Mama was very sick, and in the hospital,  Aunt Louise came to stay with us…My Darlin’ Daddy, my sisters and I.  She helped take care of our family and our home.  She was a rock for us and I am forever grateful for her and the memories I have of her.  I truly Love and Miss her…..<3

Great Aunt Louise’s Rice Pudding

2 cups cooked rice
4 eggs, beaten
3 cups milk
1 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup raisins…optional

Beat Eggs. Stir in sugar. Add other ingredients. Stir. Spray oven proof
casserole dish with Pam. Pour mixture into dish. Set dish in pan of hot
water and bake at 300 degrees for 90 minutes. After 30 minutes of cooking
insert spoon at edge of pudding and stir from the bottom to distribute
rice and raisins.  

Fruity Rice Pudding

I changed mine a little by adding 1/4 to 1/2 pureed banana 
I used a whole banana, pictured above and it was great, but it was a little too much
1 cup crushed pineapple, drained
1 1/2 cups diced apples
increased cinnamon to 3/4 teaspoon
decreased vanilla to 1 teaspoon
Place in a crock pot and cooked on low for 3-5 hours, depending on your crock pot.  
Stirring occasionally once it starts to thicken.

Cookin' Won't Wait...Time For Soup

I Love My Boys and I Love To Cook!  However, some days…sick days, I am not thrilled to be cookin’.  My Boys are barking and not acting sick at all.   ~exhales~   I am absolutely thrilled that they don’t act sick even when they are.  I, feeling sick as a dog…not certain where that came from but have always said it, would like nothing more than to go back to bed, watch cooking shows and read cookbooks all day! 

So, What am I doing?  You guessed it…in between the nebulizer and kleenex, I am Cookin’!  Seeing how I am the one that “feels” sick and HAS to cook.  It is my choice.  I want comfort food!   Food like My Precious Mama would make.  I made Potato Soup.  Hearty with skins and pieces of potatoes, dices of ham and celery in it.  Very peppery, buttery and creamy.  I am also cheatin’ and got a loaf of frozen bread out so I can bake it later to eat a huge piece covered in butter.  Hey, when you are sick…you get an off day of watching the diet.  My rules! 

Next time you are sick…drag out the soup pot and start cookin’…<3 and Hugs!

 Hearty Potato Soup


1 1/2 lb potatoes
I used little buttery ones and left them whole with skins on.  Use whatever you have and cut smaller if you need to.
Water, or broth, to cover potatoes an inch or so.
1/2 stalk celery, diced
1/2 cup onion, diced, if you want.  I didn’t today..wasn’t in the onion chopping mood. :D
2 cups ham, diced
1-2 teaspoons salt, depending on your taste
1/2 teaspoon ground pepper…more or less depending on your taste
1/2 cup milk
1/8 – 1/4 cup flour…start with less and add more if needed. 
just enough water to mix flour with
1-2 Tablespoons butter or margarine


Bring potatoes and 1 teaspoon salt, to a boil and cook until tender.
Smash and mash in pot.
Add celery and ham.
Add enough water to flour to mix and get lumps out.
Add slowly to pot..boil at least 3 minutes to get the flour taste out.
Add milk.
Simmer and keep stirring to keep from sticking. 
Add more milk, broth or water if it gets too thick.
If you aren't going to simmer for awhile, add the celery with the potatoes

Note....I think I should have made more!  ;D
Next time I will double this.

Over Load!!!!!

Tell me what you think about this!  My eldest thinks it Rocks!  <3 and Hugs!
NOTE....We play with our food and this is not a normal, everyday item on our foodie schedule!  <3

I have seen chocolate covered bacon and always wondered about it.  I was cooking bacon and a ham.  I also bought Rolos and pretzels to make candy.  Somehow I forgot to buy nuts to add to them.

My thinking as I was cooking the bacon was...crunchy and salty.  Nuts.  I made a candy like that.  Son liked that.  Then,  I thought texture and salty..ham.  Son liked that also.  Combine the two for an Absolute Over Load!  Pretzels, Chocolate, Caramel, Ham and Bacon!  Yeah, I know, gross!  But, Hey!  Don't knock it until you try it.  Also doing chocolate covered ham slices....Yep!  Heard it hear first!  <3 and Hugs!

Tuesday Morning.......My son asked me if he could take this as a snack to school today.  He Loves It!  <3 and Hugs!

A Bully At School

How my heart aches for My Oldest Son!  He is 8 years old, in third grade and being bullied at school.  This is the second school year this has happened.  By the same boy and his recruits.  Another child, whom my son once thought was his friend, has begun to harass him as well.

The bully was in his classroom last year.  He threatened my son and our the age of 7!  He continually told lies about my son to try and get him in trouble.  He even told his Grandmother my son poured water over his head at the school fall festival.  The Grandmother was getting all over me until...I told her my son didn't even attend the festival as he was sick.  She walked away...dragging the bully with her.  Her head bowed in embarrassment...tears in her eyes.  She waited until the last bell rang to take her grandson in the classroom.  I waited for her and told her it wasn't her fault but to please find out the facts before she went around accusing others.

My heart breaks....

Hurtful words, threats and now, physical abuse.  My son, who was in Occupational Therapy at school once a week last year, was trying to cross the monkey bars yesterday.  A big effort is put into this.  What should have been a proud moment turned into pain as the boy came from the other side and kicked his hands off.  Causing him to fall and get hurt.  This has happened two different has been in for 6 days.

My son asked the bully why he wanted to hurt him...the bully replied, he wanted to kill him.  Such strong words from a young child in third grade!  My son keeps asking me WHY MAMA?  WHY, does this boy want to treat me this way?  This comes from a boy with such empathy.  The one that cries over a hurt bug.  Who comforts his twin brothers when they are hurt or cry.

I fight my tears as I explain that some children just hurt inside.  They find a way to release this by hurting others in any way they can.  I told my son that..He is the bigger of the two.  He is the one that everyone looks up to.  He is the one that can do anything and everything!  I tell him about the Beauty that is inside each of us.  Some let it shine through...others keep it hidden.  They try to darken others days but Our Light Within Will Brighten Even the Darkest Day!

He left for school full of encouragement and a YES I CAN attitude!  He felt like he could accomplish anything that presents itself to him.  He would talk to this boy and tell him he isn't going to take it any longer! How Proud I am of him!

My husband did talk to the Assistant Principal today and told her of the situation since the teacher couldn't control it by just our son telling her.  She called me and told me that both teachers will pay close attention and the two shouldn't meet on the playground.  She also said she talked to the boy and his grandmother and they would co-operate.  The Assistant Principal stated that she wish she could tell me that this bullying wouldn't happen again....but she couldn't .  My son it to immediately tell the teacher if the boy bothers him again.

I pray for this little boy.  A cute little blonde haired boy that lives with his grandparents while his Daddy, new Step Mama and half brother and sister live together.  A broken home...breaks the spirit and being of such a small, young child at times.  The only attention he gets is to inflict pain in words and actions, towards my son.
My first born child at the age of 40.  My little man.


We are going tomorrow to another school, one in our zone.  I asked my son if he wanted to change schools,  he replied..YES ...I won't be bullied by ? and ?.

Hamburger Vegetable Soup

My Precious Mama would make this soup during the cooler months.  Starting Fall we would look forward to this great, yet simple,  soup!  I would come home from school to smell of this simmering on the back burner of the stove.  Served with hot, right out of the oven, corn bread…Oh My!  Y’all enjoy this and think of your Mama…cooking away in the kitchen, while you make it.  <3 and Hugs!

Chocolate Chip Banana Cream Cookie Pie

I know we are just like everyone of you with more than one child.  It seems everyone wants something different.  We either take turns with who gets to chose what, or like today, I take what everyone wants and turn it into one dish.  This time I combined Chocolate Chips Cookies one wanted with Bananas another wanted and Pudding the last one wanted.  The end result was GREAT!  With the help of one of the twins, we had this delicious "Pie" ready for all to enjoy!  We hope you do too!  <3 and Hugs!

Chocolate Chip Banana Cream Cookie Pie

Large Bag Chocolate Chip Cookie Mix and ingredients to fix it.
Large Box Instant Banana Cream Pie Pudding
2-3 Bananas
2 1/2 cups milk

I used Better Crocker Cookie mix with one egg and reduced the margarine to 6 tablespoons.  Mix and cook in a lightly greased pie plate at 350 degrees for 15-20 minutes.  As oven is different than yours so start checking early.  :D   Cool on rack.

While cooling make pudding.

Once cookie is cooled...slice bananas and layer on cookie.  Add pudding and let set in fridge for 4 hrs.
Top with whipped topping.  I keep mine in the freezer.

Cut a piece and put in the freezer for a bit. It is so Good frozen!  Enjoy!  <3 and Hugs!

Labor Day Suggestions

Ted's Pulled Pork Cooked in the Crock Pot

My husband cooked a pork butt in the crock pot the other day while I was at school with the My Little Ones.  ~love~  It was soooo Delicious!  Pulled apart with a fork and we had the BEST pulled pork sandwiches.  Unfortunately, there were no pictures of the actual sandwiches.  It was all eaten before I could find my camera.  The Boys were taking pictures again.  ~smile~

Crock Pot Pork Chops

To hot to cook this holiday weekend!  I put boneless pork chops in the crock pot and let them cook away!  They were partially frozen and were done to perfection, on high, in 4 hrs.  Husband says they were done earlier but we didn't check earlier so he won't tell me..."I told you so!"  He also says they could have been cooked on low.  ~smiles~   You decide and let me know.  ~bigger smile~

Crock Pot Pork Chops

8 boneless pork chops
1/4 cup packed brown sugar
1/4 cup cola
1/2 cup ketchup
1 1/2 teaspoon minced garlic, I used garlic in a jar
1/2 teaspoon fresh ground pepper

Mix brown sugar, cola, ketchup, garlic and ground pepper.  I didn't find salt lacking in them but add a little if you want to.  

I had to layer the pork chops.   Four then spoon sauce over.
Last four and put remaining sauce on top.

Cook on  ......  for 4 hours.  
Serve with rice.  Yum!

Spinach and Red Pepper Lasagna Roll Ups

Yesterday was a busy day, which is beginning to become the norm around here!  Busy days and busier nights is seems.  

Everyone wanted lasagna..I knew I had cheese, spinach and red peppers at home. 

I bought lasagna noodles that were flat and no boil.  When I got home I decided to make lasagna rollups instead of regular lasagna.  I heated water, not to a boil. Then added my noodles...I did them one at time.  Just because...well, just because I suppose.  Layered the filling and rolled them up.  Placed on top of sauce, put sauce on top and in the oven they went!   

Use what you have at home.  Any ground meat.  Any type of lasagna noodle.  Any small curd cheese, ricotta or cottage cheese.  Any peppers.  Any spaghetti sauce.  You get the idea.  <3  It will be delicious!
