Pineapple Bacon Jam

Yep, you read it right!  Pineapple Bacon Jam with fresh pineapple and caramelized onions...........YUMMO!!!!   My oldest is taking FCAT tests this week and I wanted to make him some of his favorite foods during the week to reward him for doing an amazing job as well as comfort him.  Y'all know how food is a comforter, soother and just an all around warmth, when things are a little It's his first "big" tests and he is very nervous about taking them.  This is one he doesn't get very often at all but really loves.



I saw Isabelle's, of Isabelle at home (facebook pg), Delicious Pepper Bacon Jam yesterday.  It is Amazing!  I love how she purees hers.  You really should go check her, the recipe and the rest of her wonderful blog out.  I just love Isabelle!  <3

Get ready to make some Pineapple Bacon Jam!

Pineapple Bacon Jam
Makes 3/4 to 1 pint maybe more...
depending how much you cook it down
and...how much bacon you have left to make it with.  ~smile~

1 lb bacon
1 medium onion, or 1 1/2 cup chopped
1 tablespoon chopped garlic
1/8 to 1/4 teaspoon kosher salt or to taste depending how salty your bacon is
1/8 to 1/4 teaspoon freshly ground pepper or to taste
1/4 cup cold strong coffee..it's all I had.  Use more or less if you want.
1 cup fresh pineapple, diced
3-5 tablespoons packed brown sugar
juice from pineapple
1-2 teaspoons spicy brown mustard, optional 

Fry bacon until done but not crispy.  Drain on paper towels.  I didn't have 1 lb.  I used some the other day to make Mary's Dried Beef Chicken and one of the twins had to eat 3 pieces of it.  <3 
Remove all except 1-2 tablespoons bacon grease..just to coat non stick pan.  Reserving the rest in a jar with a lid in your refrigerator for seasoning another time, if you want. 
Cook onions until caramelized adding garlic when onions turn opaque. 
Sprinkle with salt and pepper.  Add coffee, pineapple and brown sugar. 
Turn heat down to low and cook until soft, it takes 30 to 45 minutes.  
If it gets too thick before it is done, you can add some of the juice from your pineapple or more coffee, a little at the time.  
You can add spicy brown mustard to the bacon jam, also.  I really liked it, my oldest doesn't like mustard.  He was watching me make it and calls himself my Official Taster!  ~smile~  Now, go on and get your bacon out and surprise your loved ones..that is if there is any left.   You know you have to taste as you cook, right?  ~wink~  Enjoy!  <3 and hugs!
