Chunky Banana Nut Dark Chocolate Chip Oatmeal Spice Cookies

Yes, you read it right!  These cookies are great!   At least my boys think so.   Dark chocolate, spices, bananas and nuts.  You can add dried fruit, too, if you wish.  With flax seed, wheat germ, wheat and soy flours, and of course oatmeal...what's not to love!   I bet you could even get away with eating these for breakfast, I did!

Chunky Banana Nut Dark Chocolate Chip Oatmeal Cookies

2/3 cup turbinado, or brown sugar
3/4 cup (1 1/2 sticks) margarine or butter
1 egg
1/2 teaspoon vanilla extract
2 Tablespoons wheat germ, that's all I had*
3 Tablespoons milled flax seed*
1/2 cup soy flour*
1/4 cup wheat flour*
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1 1/2 cups oatmeal
1 cup dark chocolate chips 
1 to 2 bananas, diced
1/2 chopped nuts

*You can replace these ingredients with 1 cup all purpose flour*

Preheat oven to 350 degrees F.  In mixing bowl, add margarine or butter and sugar.  If using turbinado, mix it with the margarine and leave it for 5 minutes or so to melt a little.  It will still be grainy when you begin, don't worry, you will not notice it later.  Cream the sugar and margarine together until light and fluffy.  Add egg and mix well.  Sift flours, baking soda, salt and spices in mixing bowl.  Add wheat germ, flax seed and vanilla.  Mix to incorporate.  Stir in dark chocolate, nuts and bananas.  Drop by rounded tablespoon on baking sheets.  Cook 6 minutes in preheated oven and turn pan around.  Cook another 5 to 7 minutes until edges are browning.  Let sit 1 minute and remove to a cooling rack.  I used my Lodge 15" Carbon Seasoned Steel Skillet, to cook mine (love it!), adding just a rub of oil as I always do before cooking.  BTW...Lodge Cast Iron (facebook page) is sponsoring a giveaway for one just like mine.  I'll be starting the giveaway before the end of the February.  Please stay connected to find out how you can enter.

I'm having trouble with the formatting in the recipe...is it 2/3 c. turbinado or 3/4 c. brown sugar, and then 1 1/2 c. margarine or butter?

I just wanted to make sure because these sound great! Thanks for sharing!
