Lemon Cream Cheese Cookies

My boys love cookies and one in particular, loves lemon.  As a special treat for a school snack, I made these Lemon Cream Cheese Cookies for him.  I made Molasses Cookies for my other two.

Lemon Cream Cheese Cookies

1 15.25 oz. box lemon cake mix
8 oz (1 cup) neufchatel cheese, homemade
1/2 cup butter
1 egg
3 Tablespoons (1 Sunkist lemon) lemon juice, divided
zest of 2 Sunkist lemons
2 cups powdered sugar, more if needed

Preheat oven to 350 degrees F.  Whisk together neufchatel cheese and butter. Whisk in egg.  Stir in cake mix and 1 Tablespoon lemon juice.  Cover with plastic wrap and chill in refrigerator 30 minutes.  Zest lemons.  Mix 1/2 cup powdered sugar and zest of one lemon.  Take out of refrigerator and form into walnut size balls.   Roll in powdered sugar with zest.  Place on cookie sheet.  Bake 10 to 12 minutes. Place remaining cookie dough in refrigerator while cookies are in oven.  When done, remove cookies to cooling rack.  Repeat with remaining cookie dough.  Mix remaining powdered sugar, zest of one lemon and 3 to 4 Tablespoons lemon juice. Drizzle over cooled cookies.   Alternately, instead of drizzling the cookies, mix powdered sugar and zest of one lemon and dip tops of cookies in lemon sugar.  Enjoy!

Let's make some cookies!

 Cream cheese and butter.

   Whisk together.   I don't use a mixer if I can get away with it.

 Fluffy, creamy and already yummy!

 Juice zested Sunkist lemons.

 Add the egg and whisk away!

 That looks just right!

 Add cake mix and switch to a spoon for your utensil.

 Get that spoon working to get the cake mix incorporated.

 Now, put the dough in the refrigerator to chill for a bit.

 Stir together powdered sugar and zest from Sunkist Lemon.

 Roll dough in lemon powdered sugar.

 Place lemon sugar coated cookies on cookie sheet and bake.

 Out of the oven and cooling.

 Lemon drizzle.  I could eat this by the spoonful!

 Drizzle over cookies.  Don't you just love the lemony waterfall?!

We like them just as they are, also, with just a little bit of sugar remaining.  Enjoy!
